  • I apologise in advance for breaking with all bread-making traditions. But out of curiosity I had to try. Can you make a sourdough bread with coca cola as a water replacement? How would such a bread taste?

    Cola sourdough bread is even better with crispy bacon bits and Sprite bread is amazing with rosemary, feta, and garlic. These are particularly good in summer.

    Maybe try building vs no building:
    1) bake some dough that has the same ratio as your starter, but with salt
    2) make a regular sourdough
    3) make a young leaven with your starter and then add that to the final dough
    4) make a small leaven, then add more flour to make a second leaven, and then make the final dough
    I saw a German rye recipe that asked for the 4th type, and that seemed kinda extra to me lol

    Your neighbour is a good sport for trying a “secret ingredient” bread. As you suggested, a reduction or a concentrate (like soda stream uses) might be an interesting and potentially terrible experiment.

    Cannabis, opium, coca, qat, kratom, kava, mdma, pcp, psilocybin, lsd, dmt, peyote, ayahuasca - all mixed into the bread dough. It is all natural except the pcp, lsd & mdma. Your starter & neighbour would probabaly enjoy it too.

    Hi, would you be able to weigh your finished loaves please? I'm really interested to know how mine are turning out in comparison. Sometimes mine feel noticeably lighter and they're usually the best ones.

    In The Southern (Georgia), it's pronounced "CO-cola" all smushed together. I think the Southern accent theory is NEVER use an extra syllable if y'all can 'void it. Can't wait to try this! It could become a new Southern Staple Food like Deep Fat Fried Turkey, Bacon Candy, and Sweet Potato Pie.

    I don't have a regular oven. I have to use Breville Smart Oven with Convection and it only has 5 inches, 12.7 cm of clearance between the bottom rack and the top element.
    I was wondering if you have or can develop a bread recipe for such a small space with no steam or dutch oven that's not a flat bread ? can you even make sourdough without steam ?

    How about using an unfiltered beer or wine that has live non-sachromyces yeast such as brettanomyces?
    Or even introduce botrytis cineria (noble rot), monascus purpereus (red yeast rice), aspergillus oryzae (koji) or aspergillus sojae?

    my uncle used to bake sourdough bread with sea water, and also sometimes he use coffee instead of water too

    The aliquot method is honestly the best technique I have learnt for baking sourdough. Thank you! Out of interest, why does a stiff starter mean doubling is fine rather than a 50% increase?

      I thinks its because the stiff starter has more leavening power than a traditional sourdough starter, thus itś ok to treat it more like a yeast dough and let it double.

    Diced onion, folded in at pre shape, on a wholewheat sourdough is m best experiment.
    It's great with cheese and made wonderful beans on toast

    🤣 you crack me up, Henrik! Yes, Coca Cola is a Siren, luring us to Davey Jones Locker! But it's soooo yummy! I'm surprised the Coca Cola (which I have used to remove corrosion on my car's battery terminals) didn't kill the sourdough bread!

    When I tried using beer barm for yeast, I used the barm from a weird herbal beer and expected that the herbal blend would impact the flavor of the bread. It didn't, at least bit much. But what it *did* do was impact the aroma (and to a lesser extent the flavor) of the crust. I'd be curious if the crust of your bread has a cola aroma!

    Have you ever tried making a loaf using the brine from fermented sauerkraut? I made a lacto fermented hotsauce recently and am thinking of trying to make a starter or loaf with it.

      @@the_bread_code i made a loaf with it (had to add yeast in the end because of time) but I added a splash to some new starter and it has an extra level of funk to it (in a good way)

    Your aliquot jar method was a total revelation for my baking. I’m getting great crumb now but am wondering how you keep your crust so crunchy at high hydration. Mine seems to go soft and slightly leathery once the bread has cooled ☹️ Any genius hacks for keeping it crispy?

      It’s just because it’s fresh, that’s what you’re seeing. Mine and the local artisan bakery near me stays crunchy for roughly 24 hours, after storing for more than that it softens up. I can say that once the bake has finished, turn the oven off and leave the loaf in for 40-60 minutes as the oven cools. This will drive out more moisture in your bread giving it a nicer texture and keeping the crust crunchier longer.

    To replenish your bread karma, maybe you could do rye bread next? Or toast? I have been trying to make toast myself, but all recipes are yeast-based. When I tried with sourdough it just became a normal bread that didn't get crunchy after toasting it. What is the difference in dough between normal bread and toast? How do you make a bread that is really soft at room temperature and becomes crunchy when you toast it? Less water content? I don't know!

    What about trying just the Cola Syrup, instead of the soda version for stronger taste? The syrup is mainly used for upset stomach. Blessings.

    Obviously you didn't try Comfy balls boxers yet. They are THE best in the world, have I heard. Can't confirm it myself since I don't have any balls, but my brother and my husband can.
    Btw, crazy experiment. The crumb is uneven, but that is probably because of shaping.
    I am wondering if you can make stollen with sourdough starter?🤔

    Is Germany legalizing cannabis? I don't really pay attention to the world around me but I just saw something on some website about that. Pretty cool if Germany is legalizing cannabis maybe I will be able to visit some day without breaking my decades long streak of being baked every day. You should try my cannabis sourdough cornbread with nuts

    I really like Coke. I will have to give this a try. I have been baking bread each day for the past two years now. My neighbors really like it. I tried making a starter with just rye flour to get more of a vinegar flavor in the bread. Still no luck.

    Maybe adding a different sugar that is preferable by yeast (maltose?). They'd go for the different one and leave cola alone

    Try making a sourdough with both fresh habanero pepper and fresh garlic. I tried this, and it turrned my dough in to a corpse. Literally.

      @@the_bread_code I've used coffee to feed my sourdough starter, in place of the water, and then made bread with it. My starter was fed with coffee for several days, so it could get accustomed to it. The starter also seemed to be more active using coffee, even though I used the same flour and the same hydration, and the same room temperature. I could certainly taste the coffee in the bread when it was done. It's definitely interesting!

      There's a recipe I made a few times for Cherry Chocolate Espresso Sourdough that was very popular with everyone who tried it. I haven't made it in a while and some people ask me almost every time they see me when I will make it again.

    Henrik , I'm not sure I understand your aversion to Coke! I mean, there's no more universally enjoyed soft drink than Coke - worldwide! Sure it's not exactly good for you, it's basically high fructose sugar water with some fizz injected, but it's become a universal brand for all to admire - and struggle to match! You seem to hold Coke in such disregard... it's almost like you're confessing to making your good tasting sourdough bread with urine! Try THAT sometime, and make a comparison with the Coke bread, if you dare!
