Ingredients
* Onion(thinly sliced)
* 75/25 or 80/20 ground beef
* Salt and pepper
* American Cheese
* Brioche Buns
* Pickles
Sauce
* 3/4 cup mayonnaise
* 1/3 cup ketchup
* 1/4 tbsp mustard
* 1/2 tbsp Worcestershire sauce
* 1/2 tbsp pickle juice
* 1/2 tsp smoked paprika
* 1/2 tsp garlic powder
* 1/2 tsp onion powder
Instructions
1. Thinly slice onion using a mandolin or a knife.
2. Form ground beef into 4oz balls.
3. Combine burger sauce ingredients.
4. Heat cast iron/stainless steel pan on medium high heat for 2-3 minutes. It’s hot when water beads up.
5. Place balls on pan and season with salt and pepper.
6. Add a small handful of onions on top and smash down as hard as you can to make a thin patty.
7. Cook for two minutes, scrape and flip over.
8. Add cheese and buns(top bun first then bottom bun).
9. Once the cheese is melted(1-2 minutes), assemble burger with pickles and sauce.

Another tip for anyone making this at home, make the sauce earlier and let it sit in the fridge for a couple hrs, really brings the flavors together

@@joostine3720 i tried this but without the pickle juice since i didnt have any laying around, and honestly the difference wasnt much, but i think it was better? honestly hard to tell. skip it if you don't have time.

Why is that important? I don't own a cast iron or an all-steel.
@@kwk111 so with a “Tephlon” type nonstick (even tho the industry acts like the chemical doesn’t exist anymore lol) you can’t get that char. Nonstick is intended to prevent that. So no crunch, no browning… it darn near poaches the meat far as I’m concerned. Stainless steel kinda works but it’s TOO much stick. With a good seasoning of cast iron, it’s the right balance of stick and the ability to remove the patty. The even heating of cast iron also helps this.

@@kwk111 yeah, grab a 12 inch cast iron and you won’t go back to anything else for protein. Just be sure to ventilate adequately for those steak /burgers. Issa greasy smoky process 😷 but worth it! 😅
@kwk111 The chemical on the non stick pans also gets into your food. Another reason not to use them.
Pickle juice in the burger sauce is something I hadn't thought of, that's fantastic. And Speaking of pickles, those were *gorgeous,* the little sprigs of dill clinging to them were immaculate.

The original recipe this is based off of calls for relish which is pickle juice with small diced pickles for texture but the juice adds flavor minus the pickle texture to the sauce

I get my brioche bread $5ish, or buns $4ish from Aldi's. 3 to $4 less than where I used to get it from, whole foods but only could get it like once every blue in the moon cuz of the price.@@SheepAmongG.O.A.T

Fun fact, this is ALMOST how White Castle makes their sliders. The only differences is that they shape the patty, cut five holes in it (One in each corner and one in the center), and steam them by placing the onions first and cooking the patty on top of them.
It's really not similar, especially with that many exceptions.

After moving to the east coast, I made it a bucket list item to turn how to perfectly recreate the In-N-Out Double Double. The biggest key was getting the highest fat content ground beef possible. Second would be the sauce (thousand Island with strained relish, onion powder, paprika, and a splash of apple cider vinegar) and a good bun toasted next to the patty

Smash have to be thin for it to have a caramelized crust and a juicy interior. The ones you made still fell on the thick side to my taste. Esttik, in Spain, has a smash burger franchise called Smash Hiro and his style is what I enjoy the most.

I dont even like onions but that exact way of making onion burgers really is fire. Youd think with such little cook time the onions would remain crunchy (which i cannot tolerate) but they dont. Theyre pretty much undetectable texture wise, but ofc add alot of flavor to the beef. This exact recipe is the best way to have a burger. Except i usually like it with toasted bread rather than a bun so its more of a patty melt, but either way is fantastic
Something people always seem to miss about burgers being easy to cook is that it takes prep work to have these ingredients on hand. You either have to go and buy some ground beef or have it thawing from the freezer for a while, no one's just gonna have it lying around in their fridge because it goes bad after just a few days. So unless you're eating burgers like every single day there's always going to be the prep work involved and that's the hardest part to me, just making sure you have the right ingredients.

Steamed buns are pretty popular too. I think I prefer them for a smash burger where the patty brings the crisp
@@Ash_Wen-li what you want to do is toast them while the patty cooks, and *then* steam them while you melt the cheese. Best of both worlds

@@804MRMAN I like to put the top bun right on top of the cheese as soon as it goes on the patty. The cheese melting fuses the burger to the bun resulting in better structural integrity for the sandwich.

I prefer toasted and buttered buns with my seasonings inside the beef patties so it doesn’t burn away those flavors while getting a desired crisp texture on the outside of the beef patties
