  • Mee rebus, salah satu menu yang popular bukan saja di Malaysia, tetapi juga di Indonesia dan Singapura. Kuahnya terdiri dari stok daging, udang kering dan sedikit serbuk kari daging yang direneh bersama keledek oren yang telah direbus dan dikisar halus. Rasa kuahnya manis-manis pedas dan dinikmati bersama hidangan sampingan seperti tauhu goreng, cucur rangup, hirisan cili merah dan hijau dan telur rebus. Sesuai dinikmati sebagai sarapan pagi, atau sebagai hidangan untuk jamuan.

    Jumlah Hidangan : 15 - 18 orang
    KUAH :
    Stok Daging :
    2500 ml air
    500 gm daging lembu
    1 inci halia
    1 sudu teh penuh garam
    Bahan Kisar :
    2 biji bawang besar (155-160 gm)
    8 ulas bawang merah (125-130 gm)
    7 ulas bawang putih (35-40 gm)
    2 inci halia (20 gm)
    1/2 cawan udang kering (65 gm) - rendam sehingga lembut
    Air secukupnya
    Pes Kari :
    4 sudu besar penuh rempah kari daging
    Air secukupnya
    Pes Keledek :
    4 ketul keledek (2 medium,2 kecil) - anggaran 890 gm (rebus & buang kulit)
    1/2 cawan taucu manis (145 gm)
    Air secukupnya
    Bahan Tumis :
    1/2 cawan minyak masak
    3 batang serai (ketuk)
    3 inci lengkuas (ketuk)
    Bahan kisar *
    4 sudu besar pes cili kering
    Pes kari *
    Pes keledek *
    Stok daging *
    500-750 ml air (2-3 cawan)
    Hirisan daging rebus *
    7-8 sudu besar gula pasir, atau secukup rasa
    Garam secukupnya
    1-2 keping asam gelugor
    CUCUR RANGUP :
    1/2 cawan tepung gandum (65 gm)
    1/2 cawan tepung beras (58 gm)
    1/8 cawan tepung jagung (15 gm)
    1 sudu besar penuh udang kering (13 gm) - rendam & tumbuk halus
    1/2 sudu teh garam
    1/4 sudu teh serbuk kunyit
    Anggaran 175 ml air (2/3 cawan + 1 sudu besar)
    BAWANG GORENG :
    8 ulas bawang merah (hiris nipis) (135-140 gm)
    2 ulas bawang putih (hiris nipis)(7-10 gm)
    1 sudu teh gula pasir
    1/2 sudu teh garam
    2-3 sudu besar tepung jagung
    BAHAN SAMPINGAN :
    Mee kuning (celur) - 2 kg
    Tauhu goreng (hiris nipis)
    Telur rebus (belah 2)
    Hirisan cili merah & hijau
    Taugeh (celur)
    Sawi (celur)
    Hirisan daun sup & daun bawang
    Bawang goreng *
    Limau sambal
    Cucur Rangup *

    Mee rebus is a popular dish not only in Malaysia, but also Singapore & Indonesia. The gravy is made of beef stock, dried shrimps and meat curry powder, cooked slowly with orange sweet potato paste. The gravy is sweet and slightly spicy. Mee rebus is enjoyed with garnishes like fried tofu, hard boiled egg and crispy fritters. The dish is perfect for breakfast or can be served at a party.

    GRAVY :
    Stock :
    2500 ml water
    500 gm beef
    1 inch ginger (sliced)
    1 heaped tsp salt
    Blended Spices :
    2 onions (155-160 gm)
    8 shallots (125-130 gm)
    7 cloves garlic (35-40 gm)
    2 inches ginger (20 gm)
    1/2 cup dried shrimps (65 gm) - soaked
    Water as required
    Curry Paste :
    4 heaped tbsp meat curry powder
    Water as required
    Sweet Potato Paste :
    4 orange sweet potatoes (2 medium,2 small) (about 890 gm) - remove skin & boiled
    1/2 cup sweet tauco (145 gm)
    Water as required
    Stir Fried Ingredients :
    1/2 cup cooking oil
    3 lemongrass (bruised)
    3 inches galangal (bruised)
    4 tbsp dried chili paste
    Curry paste *
    Sweet potato paste *
    Beef stock *
    500-750 ml water
    Sliced boiled beef *
    7-8 tbsp sugar, or to taste
    Salt to taste
    1-2 tamarind slices
    CRISPY FRITTERS:
    1/2 cup all purpose flour (65 gm)
    1/2 cup rice flour (58 gm)
    1/8 cup cornstarch (15 gm)
    1 heaped tbsp dried shrimps (13 gm) - soaked & pounded finely
    1/2 tsp salt
    1/4 tsp turmeric powder
    About 175 ml water (2/3 cup + 1 tbsp)
    FRIED SHALLOTS :
    8 shallots (thinly sliced)(135-140 gm)
    2 cloves garlic (7-10 gm)
    1 tsp sugar
    1/2 tsp salt
    2-3 tbsp cornstarch
    GARNISH :
    Blanched yellow noodles (2 kg)
    Sliced fried tofu
    Hard boiled egg (halved)
    Choy sum (blanced)
    Bean sprouts (blanced)
    Sliced red & green chilies
    Crispy fritters *
    Fried shallots *
    Chopped Chinese celery & green onion
    Calamansi limes
