    I will be trying this! Eamon, flip your knife and use the reverse side when you scrape food into a pot/bowl and it helps to keep your blade sharper for longer!

      I put a layer of turkey on mine. Yah, not quite vegan but the turkey might have been, or maybe Tom was vegetarian.

    Never before considered putting pickles into the chickpea salad. What a great idea! For those who don't like the kick of cayenne, I'd replace it with a sprinkle of smoked paprika. Beautiful recipe. I have all the ingredients in my pantry and fridge now, so I know what I'll be making for lunch for the family tomorrow. Thank you for sharing!

    I like to add Tumeric and Ground Mustard and some fresh Dill. Top the salad with some fresh sprouts! Yummo! I don't do gluten, but do use gluten free bread.

    Yep my jam is carrots, celery, red onion, green apple, celery seed, pepper, cayenne pepper- that’s my base then add your pickles or whatever vegan mayo or avocado etc.. it’s just super fresh and has that straight form the garden feel! Mmmmmmm now I want to make some 🙌🏻

    I eat chickpea salad sandwiches all the time too. I also cut my tomatoes that way and it too drives me nuts when people cut it the other way!

    Yes, love Chickpea Salad. I eat it a couple times a week and do add celery and dill. I never thought of adding olives and sun dried and will definitely try. Last week I added finely shredded cabbage, like a slaw, and it added great crunch. I have that same knife for more than 10 years and love it. I love eating Toc Sandwiches, Tomato Red Onion and Cucumber on a dark Pumperknickel, bread which I can rarely find. The sandwich is amazing simple and delicious. You could add avo too if you like.

    I’m loving this series. You’re absolutely right about having to be creative when cooking vegan/ vegetarian. My husband is the cook in the family and he says the same thing. One way that he makes chick pea salad is just adding peas and carrots with vegan mayo. I’ll have to try it with substituting the mayo with avocado though. That sounded good!

      That's the documentry that made the switch for me. You'll be so happy you did. Whenever it feels hard, always think about everything you're gaining rather than losing. You're also going to be cooking and eating things you never would have tries or thought you liked before going vegan. Keep you calorie count up too. You'll have to eat more often too. Beans are pasta are your friends. For me at least lol.

    I had to try this! So, I made it today! Yay! It's tasty, for sure! I did it with the avacado and followed it the way you made it but I cheated and used pickle relish and jalapeno pepper juice, along with the addition of turmeric, lemon pepper, a little diced apple, and (sorry) bacon bits... It's in the fridge, as he's not quite ready to eat yet, but the yet to be toasted seedless rye bread, romaine lettuce leaves, and tomato slices await! Thanks for the recipe! Now, off to fix the first recipe for watermelon in that video! I'm excited! Again, thanks and God bless you!

    I make this too, a bit different but the same basics. I also like putting in a bit of the pickle juice. I just call it sandwich spread though. YUMMY

    I made mine with what I had so I used sweet pickle relish, green onions, chopped cashew nuts and avocado with tomatillo sauce. Good and the properly sliced tomato made it great...😉

    Btw I immediately made this for lunch after watching - SO. DANG. GOOOOOD! Also, I’ve tried mashing chickpeas with a fork in the past and it takes foreverrrrr. Used Eamon’s cup method and it took 30 seconds. Bless this man 🙏🏼

    Mine was chickpeas, avo, sun dried tomato, green onion, grilled artichoke hearts, salt and pepper on a lettuce wrap!!!! Yummmm, it turned out great. Oh the endless combos one can make. :)

    Hey guys. Been bingeing your channel for a few weeks now. We're contemplating our retirement to South America in about five years and you two (and Max and Lee) have us thinking about van life. Must admit, I think the DIY/van maintenance part is a bit much for me but love seeing your travels. You have inspired me though to become reducetarian - vegan before 6 and meatless on Monday. Its so hard to look at the planet and think that one person can make a difference but seeing you and a lot of your friends making the effort is inspirational. Made your chickpea sandwich last night for the family and it was a big hit. Anyway, loving the channel but still a year behind you so don't tell me what happens! :) No spoilers! lol Cheers Mitch

    I pulled up your 'Freestyle Fridays' video to snag your recipe. It's Lent and my wife is Catholic....So no meat today. We hae never tried this but as often as I have seen you guys enjoying it I thought..hey I think I will make it for her with some Zucchini steak cut fries. May try to find the Ultimate chicken Caesar Wrap and give it a go as a possibility.

    I just discovered your guys and I love your videos. And even though I’m not a vegan this recipe is amazing! I may have put too much red onion in mine but it’s so yummy. Having gluten allergies, dairy allergies, diabetic, low carb, low salt, and needed protein for workouts this was an awesome alternative especially when food starts to get boring. Thank you so much!

    Eamon! I have been looking for just this kind of sandwich filling. I have all the ingredients on hand to make them in the morning (it's about 10 pm right now). I found you guys through Trent and Allie, and I've just started eating a vegan diet after suffering a heart attack in March. So this is fantastic! I can't wait to try the Mushroom Stroganoff, but I have to avoid regular pasta and settle for gluten free. I also have to avoid salt and oil, so I may go black olives instead of green olives on the Chick Pea Salad. I think someone else gave me a Chick Pea Salad recipe but this one looks better and easier. One day I'll get your cookbook, but there's something about having an actual book in your hands, so if you ever decide to publish print on demand, Amazon has a great way to do that called CreateSpace.     Love chickpea sandwiches. Garlic vegenaise in there is bomb. Gonna try the sundried tomatoes for sure.

    Im making this today adding red radish and some red Pepper.. Yum.. good job
