- Today, I will show you a very easy and simple recipe for Crawfish Monica. This creamy spicy pasta dish, traditionally served at the New Orleans Jazz Fest, is named after Chef Pierre Hilzim's wife Monica. Chef Hilzim created Monica Crawfish in 1981. It has been a Jazz Fest staple since 1982. My homemade version is perfect for beginner cooks looking for a flavorful weeknight meal. Packed with juicy crawfish tails and a rich, decadent sauce, this Crawfish Monica will become a family favorite! You can substitute the crawfish with shrimp to make an amazing creamy pasta dinner.
INGREDIENTS
12 oz Rotini Pasta
12 oz cooked peeled crawfish tails
2 Tbsp olive oil
1 Tbsp unsalted butter
3 scallions
3 cloves of garlic
1 1/2 tsp Creole seasoning
1/2 tsp lemon pepper
1/2 tsp onion powder
1/4 tsp cayenne (to taste)
1 3/4 cup heavy cream
1 Tbsp Loisiana hot sauce
garnish with fresh scallion green tops
garnish with fresh parsley

I think the closest I've had to this is lobster macaroni.. but this looks absolutely amazing!! The jazz was a nice addition too :) Thank you for always sharing your recipes with us, I recommend you to everyone I know who likes food and cooking!

This looks like something I’d love. Anytime I’ve eaten crawfish boil the seasoning has always been super salty, but this hopefully does not have the level of salt in the cooked crawfish. Pasta and cream….heaven!

I grew up in Texas having crawfish boils often. I moved to West Virginia and lived there for 20 years, when I moved back to Texas a few years ago the first thing we did was a huge crawfish boil! I sure missed those!

Where do you buy crawfish tails?
If you live in TX you can find it @ heb. Outside of tx, look around your seafood department, maybe the frozen section.
What would you think of using shrimp instead of craw fish? Love shrimp but no fan of the other!

Nope not if they're raised in the US. Don't buy if they come from China they're terrible
I've only had fresh crawdads and they taste like lobster.
IMO, no, especially not if they’re fresh - if you don’t get good ones they can have a *slight* fishy taste but it’s very mild. They’re chewy and delicious!

I use this same cream sauce recipe, but start with a roux, add cheese, and bake on French bread. It's a toasty baked crawfish bread. 😊
