LA style dim sum is probably more canto style... I agree the chicken feet doesn't look like the ones we normally. People also eat dim sum with hot mustard sauce in Singapore/ HK/ USA, its great!
I would be so frustrated if I was Jisun dealing with a person like that pretending to be more knowledgable on Dim Sum when all she's had is white washed dim sum from LA....
I think she's also talking about Cantonese style of dim sum. Chef Jisun's flavors are stronger, and it's made from a different part of China. Taishanese, Cantonese, and lots of dim sums in California are more bland to suit our palate.
It looks so yummy. I would rather try yours than the Americanized Dim Sum.
