Was browsing Arcane's site with this in the background, because why wouldn't I be? Stopped in my tracks as soon as I heard San Mai, watching many an episode of Forged In Fire taught me to pay attention. So pretty, I want one SOOOOO badly.
I think the reason for SanMai is more traditionally to get (slightly) softer, tougher steel on the sides to provide support for an ultra hard core which forms the edge. Gorgeous knife man, wish I could swing one! You're gonna love that ZDP btw, it's *amazing* steel.

I got the one in burlap, scratched the pocket clip on a granite table the second day 😭. Also, the one I got was full of that grease some OEMs like to use, unless you don’t mind that. Otherwise pretty impressed with it so far.
By the by because I know you love your production quality. I noticed a lot of static in the audio. Might just be on my end. Just something to check on.
Yeah, I switched software for my audio processing, and I AM NOT happy with it at all. Totally re-editted a 21 minute video last night because of it... Working on it. :(
