  • INGREDIENTS
    4 eggs
    500g of mascarpone
    50ml of water
    120g of sugar
    METHOD
    1. Whisk the yolks with half of the sugar dose.
    2. Use the rest of the sugar to prepare a syrup with water in a small pot. When it reaches 121°C you will know for sure that it's ready
    3. Pour the syrup little by little into the eggs and continue to whisk until you get a smooth mixture
    4. Take the pasteurized yolks and add the worked mascarpone cream.
    5. Whisk for a few minutes and it will be ready! Serve the cream in a glass with a dusting of cocoa
