    Ingredients for 2 persons:
    Cheddar sauce:
    Ingredients:
    3-4 tablespoons of flour
    250ml of milk
    Bit of salt
    Bit of grounded pepper
    300g of cheddar cheese
    Caramelized onions:
    2 big onions
    50ml of beer
    Bit of salt
    Bit of pepper
    25g of butter
    70g of honey
1 big fresh egg ( only the best quality!)
10g of butter for frying the egg
    Two full hands of rucola
    1 sourdough
How to make chaddar sauce at home:
A made-from-scratch cheddar cheese sauce is easy to prepare at home. This recipe uses a simple white sauce base and shredded cheese to create a delicious sauce that you can use in a variety of ways.
Melt the butter in a saucepan over medium-low heat; remove from heat. Stir in the flour, salt, and pepper. Gradually add milk or light cream, stirring until well mixed. Add the cheese and cook, stirring, until the cheese has melted and the sauce is smooth and well blended.
    Caramelized onions:
Heat the pan on medium-high heat until the butter is shimmering. Add the onion slices and stir to coat the onions with the melted butter. Spread the onions out evenly over the pan and let cook, stirring occasionally.
Depending on how strong your stovetop burner is you may need to reduce the heat to medium or medium-low to prevent the onions from burning or drying out. Cover the pan.
After 10 minutes, sprinkle some salt over the onions, and add the honey to help with the caramelization process. One trick to keeping the onions from drying out as they cook is to add a little water to the pan. Continue to cook and scrape, cook and scrape, until the onions are a rich, browned color. At the end of the cooking process, you might want to add a little balsamic vinegar or wine to help deglaze the pan and bring some additional flavor to the onions.
Fry the egg, but do not overcook it! Leave the yolk liquidy!
Toast the slices of sourdough and combine everything!
    Enjoy!
