when I use eye dropper on second layer, opacity automatically gets 48% with "multiply' blending mode. its so irritating

Change the color to white, full opacity and apply the Film Grain effect again, keeping grain at 20 and intensity at 7. :)

BUT I believe the problem you are having is: Eyedropper tool. In 4:27 when u expand the path and picked the color from the bg.. when i try to do so in turned into light grey and it sows the letters beneath it. So what can i do?

Make sure that Source object is 100% opaque (Not Transparent), You should not hold the shift key while picking appearance,
Double Click on "Eye Dropper Tool" and Check all the boxes in the popped up dialogue box,
