    我聽過一個理論,噴咗油之後再氣炸,油對熱力嘅傳遞會稍微均勻一啲。不過我自己嘅話,雞塊春捲都唔會落油。因為個coating本身就會有油。氣炸完一般都會出油。但係我試過薯仔切粒,用油撈勻再氣炸,效果非常好。

    Love watching you and your interactions with The Boss! Very entertaining!
    Also thank you for your many kitchen equipment experiments. They answer a lot of my questions.
    Note: peanuts should be washed, drained, before deep frying or cooked. Just use low temperature and then increase the heat. The remaining water on the peanuts will evaporate, won’t splatter. They taste better this way. Maybe you could do an experiment about that someday. 😊

    避免用油炸食物。 使廚房沾滿油。 除此之外,要處理, 掉, 炸過的不要的油。 好影片!👍👍👍

    花生如果唔大量
    用油抄 油去到花生一半高度
    用慢火抄一樣咁好味
    唔浪费油 食几多抄几多
    抄時一樣要注意顏色
    要早少少撈起

      其實花生氣炸唔需要油,花生本身就係有油,我氣炸花生後鍋底有油,花田氣炸加紙所以唔覺得有油,我時常氣炸腰果花生儲存俾鸚鵡食

    ditto to the deep fried cooking , avoid all seed oils ( corn , veggies , sunflower , canola etc etc ) in fact they should be call polyunsaturated fatty acids aka , silent killers , not suitable for human consumption , they belong to machines as the lubricants metabolism (no intention into details) , the best alternative oils for deep fried food are coconut , avocado , olive , palm etc , have a healthy balance of protein and carbs lifestyle which makes happy wife and happy husband , love you ❤🌹😊

    但我想油炸花生應該不用太高溫,如凍油下花生再慢慢加熱應該好很多,我不知是否正確,只要我個人經驗

      大部份主婦都不懂在炸花生/腰果前用一碗鹽水(海水咸度)燙炒約半公斤花生/腰果至水份半滲透(約2分鐘),把餘水隔走,然後落油鑊熱炸至有不多的氣泡釋出,保持最低的火力至氣泡(滲入的水份)不斷逃離及明顯減少時(代表著其裡面溫度因沒有水份而容易被炸焦),所用的竹/木筷子在攪動間應可感知已達足夠的脆度時(應在焦色顯露前發生),就可盡快把熱油隔走而得到脆而不焦的成果。

    再一次多謝你的用心實驗。想知道與其氣炸一半再加油,如在未入煱前先加油後氣炸至煮完又有沒有分別呢?我的logic是如食材先加油再氣炸會不會做到油炸的效果?
