  • This is the easiest hassle-free way to cook rice - and anyone can do it! Spice it up with curry flavours for a tasty breakfast, lunch or dinner!
    Ingredients
    1 onion
    2 tbsp vegetable oil
    2 tsp curry powder
    1 mug of basmati rice
    1 reduced-salt stock cube, (chicken, vegetable or fish)
    2 mugs of water
    4 eggs
    1 tin of salmon
    1 cup of frozen peas
    A squeeze of lemon juice

    Love kedgeree. Usually make mine with Arbroath smokies but the tinned salmon will be a good stand in when I don't have smoked fish.
    Friends used to think it was weird me talking about having it for breakfast, but once they'd stayed over & had a plate of it or at least a heaped serving spoon on the side of the full cooked breakfast they changed their minds.

    I really wanted to make this one,but I don't really have a favourite mug,I like them mostly the same,so I didn't risk making it,I didn't want it to go wrong by not using a favourite mug I didn't have.
