excellent recipes/tips. I do not throw away veggies after making my bone broth since I am using it for soups and stews. I either mush cooked veggies through the sieve to get most of the pulp in or pulse with the immersion blender. Saving every little bit of flavor.
I love to make homemade chicken broth. It’s so easy, and you can season it so many ways. I appreciate you went shopping at Walmart because it’s found all over the country.

I love that you had 2 meats in your budget. I know it's picky but being able to have a mix makes the budget weeks seem easier. Especially if you have 3-4 budget weeks at a time!
$20 isn't much and yet you did a fair variety for it. Getting some sausage and also adding potatoes is something I definitely would do. I have watched so many videos where it is almost all rice and beans and tortillas and a person can vary a lot more than that imo. I know because I live it. Lol. Bread, yes!
Hi Aubrey you did such a great job on these dinners this week! I know sometimes it's necessary to do vegetarian meals but it seems like a lot of budget cooking videos are a lot of rice and beans or things like that and you proved that you can add plenty of good protein into a variety of dishes without going over budget. Staples like potatoes rice and pasta can really be a great budget stretcher and you proved that you were able to even have plenty of leftovers that you probably could have enough for another leftover night or to take for lunch either for your husband or for you and your daughter to have during the day. Great job!

@@FrugalLifeThriftyWife I'm a single person household so when I cook it is definitely cook once eat thrice or whatever four or five times is! It's even easy to freeze some of those items for later so you don't get tired of eating the same things or versions of the same things again and again. Nice to have some soup in the freezer you can pull out and heat up on a cold day for sure! Or on a day when little girl is keeping you very, very busy and you don't have time to cook. I put my broth in the fridge and then skim any fat off the top fat with a soup but I put the skin in when I make my broth so it might be fattier. I also save my onion ends to put in and peels so I don’t have to use full onions. Great meals and great planning.
FYI, carrots 🥕 taste very good baked in the oven with the seasonings of your choice. That way, you have a complete oven meal. Excellent video with amazing food choices!
The beans and sausage over rice looks amazing. I am definitely making that but I will brown the sausage in the beginning and let it cook with the beans. I have never made a rice bake and I am intrigued. Great video!
Thanks for your comment Vivian! I did brown the sausage, but added it in after since the beans have to pressure cook for about 45 minutes. I was worried it would become too over cooked. You’ll have to let me know how it turns out when you try it! 😊
Yes delicious meals. We made chicken broth this weekend out of the bones out of the leg quarters. So cheap and easy what a great meals out of the 20 dollar budget good jobs we will all need these tips .
The 15 bean soup freezes great! You can use a tiny bit of vinegar (I use apple cider vinegar) instead of lemon juice to brighten it up at the end if you want. ☺️
You should try cooking the tomatoes with the beans in the instant pot then you will get the flavor but they will cook down in the juice and you won’t have chunks! 😉 also I love putting onion skins in my chicken broth it adds such nice color! These were some delicious looking budget meals! Great job!! I’d love to try a video like this on my channel!
The recipe I was following said not to put the tomatoes in while the beans were cooking, but I’ll definitely try it next time like that! Thanks for your sweet comment Mandie ❤️
@@FrugalLifeThriftyWife If your beans are a little older don't put tomatoes, lemon juice, vinegar (acid) type ingredients in when you cook dry beans they will not soften. But of course yours were new. Just a tip for in the future or if ever you wonder why they didn't cook right when they used to cook up just fine the same way.
I love to use a gravy separator to pour the broth from the bottom and it leaves the fat at the top. Putting it in the fridge and scraping it off when it's cold works too. New subscriber here.

I try to do more veggies and starches and less meat to make meals stretch more 😊. I also like to chop of the sausage a little smaller so that you get some in every bite.

looks like you did good! I can never seem to get my budget down to just $20 and there are only 2 of us! I need to try harder and possibly not take my husband shopping! We love homemade chicken broth! We buy the 2 pack of whole chickens from walmart and my husband puts them in the smoker, you wouldn't believe the amount of liquid that comes off of both of the chickens! then we pull all of the meat off of the birds and cook the carcasses in the liquid that we had accumulated in a stock pot and let it simmer probably a good 2 hours. wala! chicken broth! I usually put in carrots celery onion and garlic to flavor it some more but the chicken smoked gives it such a rich flavor, it isn't really needed! thanks for sharing xoxo
I don't know how far you feel like venturing to buy ingredients, but the Mega Foods grocery store in Woodburn has Amazing prices on chicken drumsticks regularly. I tend to buy multiple packs to take home, divide into portions and freeze for future meals.
I definitely could’ve! I was so surprised at what we had leftover with the dinners that I planned. It’s great to know that these ingredients can stretch so far 😊
BTW, you can find the bean soup in bulk at Whole Foods. I buy it there, repackage it in dinner quantity. My family loves soups so a cheap way to feed them along with some bread. Warms the body & soul on cold days.
That’s awesome! I’ll have to go check out Whole Foods again sometime soon. I love the ice cube tray idea! I normally freeze mine in 1-2 cup portions in freezer safe containers 😊

All the tips. I'm living in Toronto, Ontario, Canada and I can't find a dollar tree that is equipped with a freezer, or a fridge. I'd really like to liked to see 👀. And even now 2024, it makes me a little sad 😢.
Most of the ones near me don’t have the fridge/freezer section. If you’re ever unsure which one has that section you can go to the Dollar Tree website and search for locations and look for ones that list a freezer section 😊
Nice job. You threw away so much flavor when you tossed the fat, skin, and pan drippings from the baked chicken. Next time add that all into the broth and then skim the fat off when you cool the broth down. It will rise to the top and harden if you stick in in the fridge.

Take and freeze broths in a ice cube tray then repackage in ziplock bags. Ready anytime. Broths aren’t hard just lots of water with bones.
