  • This time those of us with laying hens often go quickly from not enough eggs to extra eggs. How do you take care of those eggs to make them last or get them ready for preserving? Preserving eggs is one of the first big preserving activities of the year around here. And if you take it seriously it can mean eating fresh eggs all winter.
    In this video Carolyn shares some quick tips and tricks to make your surplus eggs last a little longer. Perfect for when you find yourself wondering, what should I do with all of those extra eggs

    Thank you for your video! I just bury my floater eggs under my plants when I put new plants in my garden. The results are amazing, especially with tomatoes. Blossom end rot is often an indication of calcium deficient soil. Carefully adding a suspicious egg to the soil under your tomato starts will definitely help with this problem and the roots will penetrate the shell so that you don't have to break it if you're worried about the smell (and you definitely should be).

    I did not know that fresh, unwashed eggs can stay good in the refrigerator for up to 6 months! Wow!

    The best way to rotate a supply of too many aging eggs bar none is to feed them back to the hens in return for fresh laid. I scramble/cook and mix with a bit of pet mince or cheap/old pet kibble, water to cover, soaked overnight. I add a pinch of salt & some garlic and they love it.

      That surprises me. I was always told that if the eggs aren’t picked up right away and refrigerated, they will go bad quickly.

    We started chicken's last year
    I was amazed the brown eggs when colored for Easter are beautiful bright vibrant colors. And taste so good. I usually get stomach upset when ordering breakfast from restaurants, my chicken eggs no problem. So much better

    This is a real eye opener. Always had chickens and therefore eggs growing up. I would like to have again but my wife isn't real keen on the idea. As you probably guessed she usually wins.

      If you take care of them and don’t make her do it, she might be ok with it. My hubby raised chickens until our municipality made us get rid of them . We now raise quail and Muscovy ducks as they are not governed by the city. Turns out I’m a bird person. Hubby puts up with it. My oldest son is a bird person too.

    Another alternative if you have the spare freezer space, is to freeze the eggs in two egg scrambles.. The GF and I freeze them in those small rectangular plastic snack containers, pop them out, and wrap them in wax paper... You can fit 3 dozen into a gl. freezer bag ..Sometimes you just have to have a fresh egg.... I get that..... but the scrambles are a good long term alternative for whatever is required of a couple eggs in cooking or making a breakfast you just have to thaw them out the night before

    Thank you for all the great info on egg storage. One question, if you test your eggs in a bowl of water are they considered washed? Or can you still store them on the counter? We get all our eggs fresh from our many Mennonite neighbors but we intend to be set up for our own laying hens before the winter. We only have meat birds this year. We noticed a covered crock in your kitchen in one video. We do a lot of fermentation too! Btw, have you smoked your boiled eggs before pickling them? I just made a batch, nice change from the normal. Thanks for all your effort producing very informative videos. You have a great channel! Love from Northern Canada 😊

    Sheeeeesh, this is what I needed. One of my homies gave me some chicken and quail eggs from his homestead. I had to make sure I wasn't going to give myself some crazy bacteria from being a doofus with these eggs lol Subscribing right meeowwww

    Our eggs do fine except in the summertime. Our kitchen gets to 93f most days over summer. They start developing if we leave them out from mid June to mid sept. Rest of the time they are fine. Ours Starr laying in February and lay till mid November. We run Roos and drakes with our ducks and hens.

    I have the last 16 days sitting in cartons on my kitchen table. Are they ok to now put in the fridge? And for how long can they stay in the fridge from this point forward. OR for that matter can they be waterglassed from this point forward?
    I would like to sell them. I have too many right now and would like to recoope a tiny bit of the organic feed they get. Your waterglassing is something I will try but too busy right now to start that.
    (Not washed), (house has no AC) (in VA, hot days, its July)
    Also, if you test them in water for freshness, can you refrigerate them after OR now that they've been in water do they have to be used right away?

    Hello. If you do the egg test on an egg does that then consider the egg washed? How do you wash an egg, with soap?

    Re the float test - eggs that rise to the top are "old" not necessarily bad. It is a misnomer to them bad eggs or rotten eggs. By throwing out all the eggs that float you are throwing out a lot of perfectly edible eggs (your choice of course). I see people say that the eggs that float are bad all the time. I'm not sure why that came to be the belief but I have cracked open MANY eggs that float over the years and more often than not they are perfectly edible. It is usually pretty easy to tell an egg that is bad because it may give off scent, it may be unexpectedly light weight or it may slosh when you shake it. Also, as a side note, for eggs that are found in nests - floating them only works to tell the age if they aren't partially developed chicks :( Those will lay on the bottom as well.

      I agree. All the floaters that we have cracked open have been somewhat dehydrated (less white) but not rotten at all.

    Hi Carolyn, I can only get grocery store eggs. Trying to get my husband to only buy organic, he buys for me but regular for himself! I wanted to make the fermented eggs but didn’t go further. Watched your video and gave it second thoughts till I find really fresh organic eggs, love your videos

      Linda DeFeo your local farmers market should offer fresh farm eggs. The egg labeling can be so confusing. I don’t necessarily need organic eggs but it is important to me that they not be from hens kept in cages. Know what it means when they are labeled pastured, free range, organic, natural, etc. Even when they say cage-free it can mean they are loose walking around, packed in a huge warehouse building and still not be able to scratch up the earth or grass, not see sunshine or the light of day.

    I have started steaming my fresh eggs and they peel so easy. I tried boiling in salt and in soda, but steaming is the best.

      I tried the instant pot for hard boiled eggs and will never do any other way again. I just put a shallow rack in the bottom. Sit the eggs on the rack, add a cup of water and set instant pot for 4 min. Allow it to naturally vent for 4 minutes and then manually vent the rest of the steam. and place those eggs in ice water. Even fresh eggs will peel like a dream.

    My understanding was if the eggs are pasturized they need to be in the fridge. We raise chickens and ours stay in a carton in our pantry nothing better than room temp fresh eggs. We use a medium soft brush we brush our dirty eggs off with we do not let water touch them.

    I seen somewhere that if you have a few dirty eggs that after you dry them coat them in mineral oil since it is a natural coating like when laid. What do you think about that true or not/

    Hi there, great video! I have a question about eggs and roosters. What if there is a rooster in the coop and he may have fertilized the eggs? Do I still leave them on the counter unwashed for weeks at a time?

      It’s ok as long as your kitchen stays under 80f. Over 85f they can start to develop. We run drakes and Roos with our girls. Our quail eggs can’t sit out in mid summer or they develop immediately. They only need 17 days to hatch. We keep them in fridge or limewater to preserve. We keep the limewater ones in a second fridge to extend storage. We have 2-3 months over 100f

    question on lime water preservation: I'm starting with dirty eggs. Do I wipe? Do I wash? Can I preserve them or are they a "wash" (pun intended) because they got muddy/poopy?

    Hi Carolyn, Merry Christmas ❤️ I was watching this old video, as my sister in law gave me 20 fresh eggs from their farm. They were laid Dec. 21 (4 days old) We have unusually warm weather for the season, and it is muddy outside. My eggs have spots of dirt on them, my sister in law tells me not to wash them, just rinse them in warm water before using them. We go through these eggs fairly quickly, with two grown sons in the house. What would you do?

    Question. If you float test an egg would that remove the bloom? Or is it ok to float test them and still keep em on the counter

      I believe it would remove the bloom or at least damage the bloom. Only float test if you have intentions of using them quickly. Just prior to making an egg dish would be perfect. Remember to dry them off also.

    If I dry brush the eggs to get the dirt off, can I still water glass the eggs? Would the strong base pH of the hydrated lime inhibit the bacteria from growing or becoming a problem?

    Hi just had a question, so I washed my eggs and my husband was giving them to his friends but I didnt know I shouldnt bc they were really bad looking sometimes. If they leave them out on their counters would they be fine if the eggs were out for a week? He didnt know I was washing them and I didnt know I didnt need to.

    Our Recipe For:
    Egg w/Cream Sauce
    "G" and "c".
    1 boiled egg, diced. Save the yolk aside, for (garnish) topping,
    2 Tablespoons of unsalted butter,
    2 level Tablespoons of all purpose flour,
    Cracked black pepper,
    Vitamin D milk.
    2 pieces of medium toasted white bread.
    On low heat on the stove top oven, melt butter.
    Add flour, stirring.
    Add pepper to taste.
    Add milk slowly, stirring.
    Add diced boiled egg, stirring.
    Pour over toast on your plate.
    Garnish with crumbled yolk.
    Now for Variances; Instead of adding the diced egg, add 1/2 can of drained Tuna, or chip beef, and serve over toast.
    This meal will serve one hungry adult, two weigh conscientious adults, 1 & 1/2 teens, or two small children.
    This is is a cream sauce, not a gravy, and should be served immediately, and not refrigerated, for a fresh taste every time.
    Remember to leave your crumbled egg shells to the side of a tree, or side of the yard. This is for the birds!

    when you say wash - do you use a soap? just water? air dry or towel off? thanks! i want to oil my eggs for storage and can't seem to find clear instructions for it, other than wash the eggs and oil them.

      I think she said to rinse them and walk away for a few minutes. Come back and the mud will rinse off easily

    I have been cleaning my eggs by soaking them in cold water, peroxide and vinegar. Should I throw them away?! I had no idea that I needed to use warm water. I'm a 1st time 🦆 and 🐣 mom. 😱

      Unfortunately, that won't work because you want them to be farm fresh, unwashed and non-refrigerated.

      homesteader downunder Australia. At our home we crush the shells to feed back to the chickens as a source of calcium. That means we dont need to buy in any oaster shells.

      I don’t have chickens or other animals. I just toss them in my compost bowl with my veggie scraps and they go onto the compost pile.

    Someone gave me some fresh eggs but they didn't wipe them off so some are a little dirty but they've been in the fridge so how do I clean them and are they any good and safe to eat since they didn't get all the stuff off? Im going to get my own chickens but I got to get all the stuff and build a nice place for them im in the city

    Carolyn I just bought
    fresh eggs from a fella. He did not wash them.and the are dirty!!! I took a damp paper towel and wiped them down will they be ok? After watching your video there was 14 that was pretty dirty and I washed them and they cleaned right up. I can't eat 14 eggs in the morning what do I do???

    How does washing the dirty eggs affect them? I have about 20 chickens and have a pretty big chicken run so they get dirty and when i check the chicken coop for eggs I always get a couple dirty eggs here and there and always wash them and have them there for days and still nothing wrong with. So thats why Im just wondering how does it affect them. 🤔

      It washes off the natural protective coating on the egg, making that egg go bad faster. Washed eggs will still be fine to eat for days or weeks depending on refrigeration, but unwashed eggs last week's or months

    I was given a dozen eggs that are dirty and put them into the fridge so I could wash them when I was ready to use them. Was that wrong? You said cold water draws the impurity into the egg and I thought that the cold temps in the fridge would do the same thing? They’re still unwashed. I didn’t want to lose them. Are they alright to still use? Thank you :)

      I have the same question. I’ve been buying fresh eggs from a family in a neighboring city for many years. We buy 6 doz at a time and it takes me about 3 weeks to use them. The eggs are always “muddy”. I refrigerate all and wash two doz at a time. Those are used within a week or so and when they are gone, I wash another two dozen. It has worked well for me, but not sure it’s the best way.

    I accidentally get egg white on my eggs when they break in my pocket. I let the wet eggs dry without washing. Can they keep just as long when this happens as long as I don't wash them?

    What am I doing wrong with my chickens they're not laying eggs like they should never have chickens would not lay eggs I have about 20 for chickens and I get maybe to exhibit their free-range run around the yard I bring home scraps from my restaurant plus give them they're scratch that they need for their feed what am I doing wrong?

      Are they getting any layer pellets? Chickens need high protein to produce eggs, and the right amount of light per day.
