I don' t think you save power going down to one motor for dual motor scooters. Pretty sure it has to use more power unless you're on perfectly flat terrain moving slow.
You are correct, my wife rides in single I ride in dual. After 10 miles of riding the voltage remaining is the same, sometimes her volts are a little less less.
I'm a bit late but just wanted to add onto this- When riding in single motor mode at high speed, the single motor is going to use almost 2x the rated watts to get to that speed. If you are riding well below the top rated speed, then using single motor will save a lot of battery
You're absolutely not going to find a scooter that does 80mph for under $2K. The only scooter I can even think of that might possibly reach that top speed would be a Rion which generally costs well over $6K and is made to order meaning there's a six month or more wait time to receive it after order is placed.
