And in a place such as we see in the episode, odds are the footsteps would have different materials and would react to some form of light differently. The broken branches also cloud up in the episode, likely an attention to detail if it's looking for the smell of it.
6:19 a good tip if you ever want to remake it PVA foam is what most cosplayers use that reinforced with PVC and covered in either metallic paint or lightly sanded foil will give it a good solid look and the "antenna" most Mandalorian helmets have is actually a display screen so that could help with the IR camera placement as well

(for shits and giggles; Stormtrooper 'plastic' looking armor is made of Plasteel, also a made up alloy in the Star Wars universe)

Mandalorians typically have a scouter attachment for their helmets which have the long-range and augmented displays built into them, rather than it all being contained in the helmet itself. You could have made it easier on yourself and had a more authentic mando look if you did that.
I rewatched the magnification and he has his rifle up every time he gets the magnified view. I believe the scope on the rifle is linked to the visor and sending data for the magnification. He sees it in his helmet display, but needs to point his rifle at what he wants to enlarge. --- also. Awesome video and I happen to have the exact night vision scope you used.
The fuzziness adds to the Star Wars aesthetic. I honestly thought you added that in post until you said it was a hardware failure, because it looks quite similar to what you see whenever you get to see from the POV of anyone using binoculars in Star Wars.
Hey Jay, this is awesome. Can I make a suggestion though? How about you 3D print the entire mask, spray paint it with metallic chrome, sand it, and repeat that process 3 or 4 more times. It'll make it look a lot more clean. You can also use Immersion goggles (Occulus Rift goggles, or similar), to house the field of view from your glasses AND the scope, and extend the cables from the AR Glasses to a control panel in a metallic arm bracer like Mando has. That way you can control the

Hearing would be doable, just attach some microphones to the inside of the helmet and have the audio be played back to you louder, and the pair of sticks would most likely not be doable at home.

Wow I could never imagine that this could be made for real. Just imagine a bike helmet with night vision. Some high end cars have this infrared (?) camera that lets you see even in mist. Maybe put that in an helmet?
