Too Many Zucchinis?

  • Do you have more Zucchinis coming out of the garden than you can eat? Here's 3 ways to solve the problem.
    SWEET MUSTARD ZUCCHINI PICKLE
    1.5 kg chopped Zucchini
    1 kg chopped Onion
    200 g Garlic and Jalapeno (optional)
    1 cup salt
    Cover with water and soak 4-12 hours
    Drain and rinse well.
    3 cups Apple Cider vinegar
    3 cups white vinegar
    2 cup raw sugar
    1 cup Xylitol
    3 Tablespoons ground Mustard
    2 teaspoons hot curry powder
    1 Tablespoon Turmeric
    Cook till soft - 45min -1 hour.
    Thicken with 3/4 cup cornflour.
    Add to sterilized jars while hot.
    Makes 3.5 kg

    I live in England now, but used to live in Launceston where they grew a treat! Here they can be more hit and miss. Lovely to be able to visit your garden from here!

    Thanks for the great videos. I grate zucchinis, roll in a tea towel and twist to squeeze out excess water then freeze in meal size serves. Works really well. I also make big batches of a simple zucchini soup with lentils for protein and freeze in meal sized serves. When we defrost to eat we add Parmesan and cream - delicious. I have 6 plants for 2 of us and still can’t get enough. But I do tend to pick them small.

    That's amazing. I actually grew a marrow by mistake. I only noticed this huge zucchini a few days ago and couldn't believe I had missed it in the daily picking for so long. the end of it had wedged into a corner. I used some of it in a ratatouille dish two nights ago, then last night I cooked a zuccini and rice dish, and tonight added some to a boiled vegetable dish (which was not very tasty, actually). I have anothe batch of zueehini alredy waiting. I like the pickle idea and might give it a try. We have two plants for our family. Thanks for sharing these options!

    In Launceston here. :) The marrow for winter suggestion is a good one. I will give that a try! I did know it was an option.

    You cant have too many zuchinnis in my opinion!😋My favourite way to cook them is cover them with turmeric & smokey paprika & simmer them in pineapple juice!! Or to cut them in half longways & put grated cheese & bacon on them & grill them.your pickle sounds very nice!!

    Love the video! You are a encyclopidia of information :)
    I do have a couple of suggestions though. You should try canning them with tomatoes, onion and mushroom. Another thing to keep in mind is that the flowers are eddible. You remove the stem and inner parts so you just have the petals left, then you can seperate the petals and dip them in a light batter and deep fry them or you can stuff them and pan fry them in a bit of butter. My personal favorite way to eat them is raw. Just fill the flower cup with a nice chicken or tuna salad and eat like a small wrap or shred them for a mixed green salad. Yummy! I would also just pick them and eat them right in the garden! In some countries the flowers are shredded and added to soups and stirfry type dishes, just remember they dont take long to cook.

    Great idea on the mustard pickle. We’ll definitely be trying that 1 this year! I plant about 10 zucchini plants knowing that we would never keep up with them. We absolutely love roasted zucchini and having it in lots of dishes from roast vege and cous cous salad to pastas etc.
    but I plant all the extras because they make great food for our chickens. We all have great fun smashing them or chopping them up with a small axe and the chickens go crazy for them. Definitely cuts their feed bill down quite a bit over summer and autumn, we plant extra pumpkins for the same reason.

    hi from northern nsw.. tried to plant out zucchinis.... all the plants died lots of mildew on the leaves.. there are no bees around either...no food around no pollination... any help appreciated... lost so many plants...

      From what I hear it has been pretty wet up there? Wet weather is prime mildew conditions and will also stop bees flying. Only option is to try again when the conditions are better. That may mean you need to plant and have failures a number of times!

    Had to do that last year with my chokoes. I was taking 2 shopping bags a day for a while to work , some did'nt know what they were but the South Americans & Phillipinos loved them. Trouble is that some used them to grow & my free market looks to be over supplied. The pickles were great although the cook got sick of making them.

    i do my zuuk pickels the same way i make a bo bo last year i put corn flower and its no good ill never put corn flower agane the year bifor with no corn flower was perfect

    My first year growing zucchinis! A few large ones which I processed & froze. Will dehydrate some as well. I'd like to try telegram pickled zucchinis too 😋 Thank you 🇦🇺

    Grate and dehydrate. Cut into cubes and slices and dehydrate.

    I make a version of the Meghan Markle pasta sauce and freeze it. I can't recommend the recipe enough.

    Just wondering, do you harden the marrow off in the sun as you do pumpkins 👍🪱🐝

      Yes, the shells will harden and they will get sweeter.
