My wife and I said goodbye to Sydney suburbs and moved to Wentworth Falls last May. We love nothing more than to get home from work, have an early dinner and go bushwalking or sit at Lincoln's Rock (or another lookout) and enjoy the view, fresh air and peace and quiet. It's a lovely place to live.

My family moved to the Central Ranges area not long after Cox built his road over the Mountains, with the last descendant to live her life there dying 25 years or so ago.. Although I was born and raised in Sydney, the area north from Oberon to Mudgee still has a special feeling for me. I'm not alone in that with my niece having bought a property not far north of Mudgee, and in the last couple of years a nephew moving to near Mount Lambie (very cold winters there!).

With regards to Wagyu… it is of course a Japanese word meaning “Japanese Beef”. Back in the 80’s a US company called Westholme started importing live Japanese full blood cows for export of Wagyu to Japan. Australia followed suit in 1990. Both countries managed genetics of the subsequent offspring but unfortunately the US got struck with mad cow in 2003 (sadly last year there was another outbreak) which impacted exports. Wagyu cattle was phased out in the US around 2005 (there are limited full blood cattle still in existence though) and Japan has also banned export of full bloods.
This left Australia being both being disease free and still managing full blood Japanese genetic cows as a way to ensure strong export market (particularly to Asia).
Australian Wagyu producers tend to save the true Wagyu stuff for Japan export. The Wagyu sold in Australia doesn’t need to be as strict and is often cross bred with Angus or other to produce something that the Japanese wouldn’t necessarily call Wagyu, but still has genetic lineage with the original Japanese cows (even if by cross breeding).
Australia is the second largest exporter of beef after Brazil with Asia being the main focus for Australian producers.

Guys, I must say I always have a chuckle when Mericans say they are scared of snakes and spiders in Australia.
    Some Australian facts:
    * On average, there are only TWO deaths per year from snake bite.
    * In the last 40+ years there has only been ONE recorded death in Australia from spider bite.
    Meanwhile in the USA:
    * There were approx 640 mass shootings in the USA in 2023.
    * There were 40,000+ gun related death in the USA in 2023.
    * In the USA there are MORE guns than people.
Being an Aussie, guess which country I’m going to be safer in? And it ain’t Merica!!
    Anyway....
Yes we are very luck with all the bush land that surrounds Sydney, National Parks to the North, South and West, plus of course, the Ocean to the East.

The point of my comment is not designed to give Americans a kicking regarding firearm deaths in the USA (though the stats from 2023 are accurate).
The is more about that nearly every American says exactly the same thing about Australia, eg, “they are too scared to come here because everything here is trying to kill you”.
Us Aussies (all 26.6m) know that is rubbish, it’s a stereotype that pervades just about every comment made by Americans.
A few cold hard facts, eg, the very low number of annual snake and spider bite deaths is almost nil in relation to the Australian population size (US firearm deaths on the other hand is ridiculously high).
      Cheers,

I would avoid walking in the sun between 11 and 1 as the UV rays are much stronger here. I recommend seeing a show in the Opera House. Don't be like those tourists who like to take pictures in front of landmarks but never experience the beauty of the landmark. In the Opera House they usually have plays and ballet and music but they also have workshops like right now they have meditation workshops and architecture workshops. At the start of March they will be playing Shakespear's A Midsummer Nights Dream. The Great Gatsby is also playing now and there is also a Gatsby Dining Experience at the Opera House with limited seats of 20 people. Thats something I probably will never go to but I would love to see it in your vlog even if its just a few photos to show what theyre eating 😂 and your review of the experience as youre probably not allowed to film inside.

There are not about 20 deadly snakes. Barring some unusual allergy some people may have, there would be at the most a half dozen varieties. As for spiders, there are only 2 in the wider Sydney region - the redback, which has a red stripe on its back, and the Sydney funnel web. There are anti-venenes for them all.. Our part of Sydney is home to the Sydney funnel web, and you have to be very careful in gardening. We catch 1 or 2 spiders most year (don't do this unless you really know what you're doing and are wearing proper safety gear). Once we've caught one, we take it to the casualty ward of a nearby public hospital. It's collected from there and taken to a works not very far away, where it's milked of its venom. That gets turned into the anti-venene. Since this was devised, there have been no deaths. But don't even think about doing this unless you know exactly how and are wearing protective clothing.

Have you had a Chicken Parma yet? (Short for Parmigiana) It's an Aussie pub favourite, served with salad and chips. Although I think those crazy Sydneysiders call it a Chicken Parmy..

There is a Sydney Nova Scotia that was founded in 1785. It was a city but lost it's city status in 1995. It did have a steelworks, but now it is "famous" for having the world's largest fiddle. Apparently there was a Dutch teen that boarded what they thought was a flight to Sydney Australia, and ended up in Nova Scotia. And there is a Sidney, Montana. Don't spell Sydney incorrectly when booking your flight.

Not sure if it’s an American thing - we just always like to clearly state where we are, especially since we have viewers from all different countries. Not just Australia where they will immediately know which Sydney you are referring to.

It’s just that l’ve been noticing for years that Americans always say..”London England” or “Paris France”….there are certain cities in the world that don’t require the add on of the country…maybe Sydney is one of those cities?@@juanmarcelandrhylan
