    Is there a way to make what you have here, but stand it vertically and have an identical pallet on the other side that moves in the opposite direction as well? And both use the same motor?

    This would not work in the real world. If something jams, the stepper is going to miss steps and ruin the timing. You need some kind of feedback such as end stops or an encoder.
