I wanted some clarification on how long you leave it in the jars before racking it, then how many months do you leave it in the next stage? Also, needed clarification: when you add the sugar do you reheat the water, or just add the sugar into the warm water? Also, what is your thoughts on removing the green piece right below the yellow petals? I hear it both ways, some people remove it some people don’t. Those who do not add a box of white raisins to offset the bitterness. Your thoughts?
