  • Irish Ox Ribeye Tomahawk Steak reverse seared: Low heat for approx. 60 min flipping the steak each 10 min until the internal temperature is around 50 °C / 122 °F, then direct heat for 4 - 8 min until the internal temperature is 55 °C / 132 °F (for a medium rare cooked steak) - You can use any heat source: oven, fire, charcoal grill. The only necessary tool is a thermometer.

      @@motonoob5485 You bet your ass I still would've found a way to clean it off the best I could because a steak like that is getting eaten, no matter what! A good prime ribeye steak, thick cut, especially a tomahawk style like this, aren't exactly cheap if you're just the ordinary middle-class westerner. Not everyone can afford to spend $50+ on a single steak, if we're talking USDA Prime or even higher quality.

    Nice bit of beef and for my liking, perfectly cooked. Here is a little lesson for the stooges commenting about how raw or overcooked they think it is. When you cook a steak or order one, you get to choose. Blue, Rare, Medium rare, Medium or well done. It is not cooked 'wrong' just because you like it a certain way. The world does NOT revolve around you. What you think is right or good does not have to mean that everyone else with a different opinion is wrong. Here's my tip, if you want it rare, take it off at 51c, medium, take it off at 57c, well done, leave it on all fu(king day and knaw on a fossil if you enjoy that. Just save us all the nonsense about what you believe is right or wrong, and enjoy your steak the way you want it.

    It may not be as interesting...but it comes out way better and is super easy. Sous Vide it @ 131 for about 1.5-2 hours. Sear on high heat for roughly 1 min each side. Comes out amazing.

      I love both methods, but prefer RS for the fact that I can get a delicious smoked flavor before searing it.

      Sous vide has its pluses and minuses. I do both, but find doing reverse sear over coals and mesquite chips imparts a better flavor that I can't get with sous vide. Mesquite in my opinion is given to us just for steaks, a light smoke of mesquite then a final sear makes for the best steaks I have ever had. Sous vide is up there especially if you use good butter and a few sprigs of thyme in the bag. I tried searing over hot coals with mesquite, but its not enough time for the smoke to impart its flavor.

    Sous Vide can also have great crust. Just undercook your steak a few degree and then sear it afterwards. Want smoke flavor? Put in some smoke liquid, butter, herbs...etc. Driving or flying to your destination, is just a matter of preference. A properly cooked steak in either method will give you a great...steak. I do both, but prefer reverse sear when I have the time and the means to do do. There's nothing like waiting for your steak to cook on a grill with a Miller on your hand.

    To all of the people commenting on how this steak is undercooked! Do yourself a favor and never spend a penny on beef again! You are wasting your money if you eat steak any more cooked than shown here. Stick to chicken and hockey pucks. And to the cook...you need a better steak knife. Lol. I give the grill an A for originality and a B for the steak just because I like it more rare than this. Good stuff though, thanks for sharing.

      I don't understand people calling the steak raw. To my taste, the steak is just a hair overcooked. I like my steaks bloody red in the center ('blue'). To each their own, I guess.

    I prefer steaks on low smoking oak fire heat from chunks in a closed grill about 120° Celsius to 50° internal. For those not having Mesquite, oak is the way to go. Try a simple steak from a burning oak fire one day. I had this in Switzerland for the first time and it turned out great.
    Searing is just a question how to get your personal best high heat. I like it on a cast iron grate and the coals inflated with my little battery powered air pump.

    Look into getting a sharper, non-serrated knife, gives the meat a better mouth-feel when eating, lower 'juice' loss, and also cuts much better.

    i think it need either a more even heat or a longer start cook like 65 min to get that last little bit of rare and make it more mid rare.
