I'm an avid home baker and I've already tried this one and It's quite nice. when you shape you'd better use both hands, you get the index finger and thumb get together on both hands then you put the shell between them clipping it into a zig-zag shape (one index finger goes in between the other hand's index finger and thumb) reiterate it, then you can make beautiful traditional shape.
I love karjalanpirakka and you did a god job, but as you say the bottom need to be much thinner. We always eat them with eggbutter, that is melted butter with hardboiled egg in small pieces blended in it.

Just remember, no self respecting chef or baker would ever use margarine. It is absolutely disgusting and ruins whatever recipe you add it to. Also, it's not good for you....

I love how you casually mention to set the oven to 300°C! I just checked my oven, 250 is the maximum, and I can't remember the last time I had it higher than 220. Thanks for the video, I will definitely try to make some of these. Can't believe they have them in Lidl there, if they sold them in the UK I would probably buy them all the time.
I was surprised the recipe said that too! I usually only see up to 200C as well. And thank you for watching, it really is convenient to have them readily available in the shops here! :D
I live in the Scottish Highlands and my mum and I used to make karjalanpiirakoita or 'kalittoja' pies as we call them all the time. We would put our oven to 250°C with the fan and that was sufficient for us. Only problem is sourcing the rye flour which can be a bit pricey. Pudding rice or risotto rice for the riisipuuro can also be pricey, but as another person commented there are plenty of other (cheaper) fillings one can use instead of that's a barrier. Or if you're like my dad and don't like the rice filling.

I never would have guessed. 😂 If you don't have a measuring jug look on the side of cream or yoghurt pots. They sometimes have measurements on them. I use one for amounts smaller than the minimum ones shown on my measuring jug. How can you live without a rolling pin?? I have three. You need to put flour on your rolling pin and hands to stop the dough sticking to them. Are the Karjalanpiirakka sweet or savoury? I've never had rice porridge before.

Karjalanpiirakka is usually savory in my experience, the rice porridge can taste quite sweet on its own but in the pie I think the crust makes it taste more savory :)
The filling in an authentic Karelian pie can also be barley, potato, buckwheat or root vegetables. Barley was the original filling. Rice was way later addition since it doesn't grow natively in Finland and has to be imported, but it has now become the most common type of filling.

One is the regular wheat flour (white flour?), and the other one is rye flour = ruisjauho
The challenge for me is to make the kuori gluten-free, but maybe I'll try.
Worth trying at least :D They sell gluten-free ones in the store so it's possible!
