Make Stuffed Jalapeno Chicken. Take your chicken breast and slice it in half on one side like you are going to open a book. Leave it attached on one side. Now either grill your chicken until done or bake at 375 degrees until done. One of our favorite ways to make chicken. I often cook in my crockpot overnight. In the morning I refrigerate the meal. I then only need to reheat dinner when I get home. I like to fix a Turkey breast in my crockpot with 1 cup of water. I cook it until it falls apart. I then take the juices and 2 turkey gravy packets and make turkey gravy. I serve it on top of mashed potatoes or bread with cranberry sauce. The leftover turkey you can use to make turkey salad for lunch or to make a casserole with .
An added way to add extra flavor to ur chicken tacos is cook the chicken breast with a jar of salsa and a packet of taco seasoning it litteraly tastes just like the chicken u get in chicken tacos or quesadillas at an authentic Mexican restraunt. Just use ur favorite salsa, I always make mine in the Crock-Pot and it is mind-blowing
For the crockpot chicken tacos..... try doing chicken, sliced peppers and onions (like you would for fajitas) and instead of broth, use red enchilada sauce. You can still add the black beans, corn, etc.. and taco or fajita seasoning and jalapenos or whatever you want but the chicken, peppers, onions and enchilada sauce and seasoning packet is AMAZING! You'll get the extra spice plus the added flavor from the enchilada sauce is so awesome! I also make Spanish rice on the side and put it all together in burrito shells (my husband and I call them "fajita-ritos"). We make this probably twice a month because they are so good and the leftovers go great on top of nachos as well! 👍Thank you for sharing your recipes. I love getting new ideas for dinner!

To make bacon frying easier just cut it up before you cook it if you want small pieces anyway. So much easier, cooks evenly, more quickly and I find it doesn’t spatter as much. Also if you put it in the freezer for 15 minutes it cuts so easy. Just a thought. You both make cooking together so much fun!

Where did you find the Newman’s Own Pamersan and Roasted garlic dressing & the Greek seasoning? I can’t find it in my town but our town has 3 options for grocery shopping.
The reason you add broth to the tacos is for that meaty umami flavor. Before using the fajita seasoning, try using chicken base and add a little water. You really lose that taco flavor without it. Because you added other items like beans and such, I would have added some additional onion powder, garlic powder, salt and pepper or another pack of taco seasoning. Kind of simulates seasoning every layer of the dish.

I can’t find it anywhere either and it was the only steak sauce I would use. Now I just make my own concoction with some A1, ketchup, worchestershire sauce, garlic powder, onion powder. It’s not the same but it will do. Love your opinions of the meals and what you’d do differently. Can’t wait to try the pasta salad!

It’s really easy to take the nasty tendon out of that chicken. Kim Wadsworth over at The Wads showed how. You just grab it between the tines of a fork and pull it out. Easy peasy.
