Loving the Korean phase of this street food series 😋. If I may make a suggestion for the next one: JJajangmyeon. (yes double JJ is correct) Been eating this stuff since before i could use chopsticks correctly as a child. The neat thing about this black/dark brown sauce is that it doesn't have to just be put on noodles, it can make an awesome filling for an omurice or even as an egg toast as well. Give it a try, no regrets.
so that's what that is in korean, its ja-jiang-mian in china (iirc). it's made with a sweet bean sauce with sometimes ground pork (iirc) and noodles. tastes great with green onions as a topping
Here in Puerto Rico Fry sauce is called Sorullo sauce, sorullos are finger length rolled cooked Corn dough, and the fried till the outside is crunchy, and oh boy it's so good, especially when you make the sweet Sorullos and dip them into the sauce... He'll YEH! I usually make the sauce as it's usually done Ketchup and Mayo, but then I add 1 crushed garlic, a few drops of hot sauce and a small capfull of Cherry vinegar.

I finally tried this and while i got better at wrapping on my third one it was still hard to eat but it was sooooo delicious. Like i dont know how to say. It is creamy salty crunchy it was Just great. It is like one of the meals I would still eat even If I was full. Here and there I changed some stuff Like I dont eat ham so I used like Turkey Salami slices or we dont have Cupid Mayo here So I Just used my homemade one(Thanks for teaching me that one too :D) also I just used turkish hot pepper Paste instead of gochujang since they are basicly the Same and I cant find any gochujang here, finally I didnt had Brown cheese -and I wanna try it with some too If I get my hands on it- but with just regular cheese it was delicious too.
As an Idahoan, fry sauce is a thing here that seems other people elsewhere are unaware of. What I miss though is good Chinese food. Mushu is hard to find and no dimsum restaurants either
The brown cheese looks like gjetost or brunost cheese, you can find this stuff in any ikea I think. Also a common add is sweetened condensed milk into the 3rd sauce, the mayo you spread on bread. The condensed milk is why a lot of korean street food is sweet in this addicting way.

Just so people know and don't get disappointed if they ever go to South Korea -- that style of rolling an egg around it is unique and not common in South Korea. It will usually have the some of the ingredients you're using but formed as a normal sandwich. Go-chu-jjang (고추장) is a little weird and not normal. It's usually just ketchup and mayo. For the cheese, it's usually just yellow American cheese. There's some variations, especially with chain restaurants like Isaac's Toast. The main point is the cabbage with the ketchup/mayo dressing and buttered toast that makes it so good. If you want to keep exploring Korean street food, you should try ho-tteok (호떡). It's really really good!

Video idea, feel free to use it whenever: Often, Street foods around the world tend to have simple ingredients made in such a way, the whole exceeds the sum of its parts. What if, using your knowledge of garnish and supplementary foods to the main food, you present that same, simple street food in such a way, it blows the mind off of anyone looking at it. Basically, you give it the "Over-the-top" presentation that Food Wars dishes had from the show, but you give that treatment to mundane yet delicious basic foods. Say for example, a French Toast. You add to it with whatever complex Garnishes and Plating techniques you know, to make the final assembly look totally out of this world.

the reason that brown cheese looked and tasted like caramel is because thats exactly what it is, its condensed and caramelized whey, and its delicious, one of my favorite things to have on pancakes or in oatmeal.

Serious Sauce: Equal parts Kewpie and Gochujang. (add a splash of fish sauce if you want the umami hit). Try it on fries, burgers, or any meat some time...

I now know what I'm making for breakfast, just modified. I'll be using sauerkraut instead of raw cabbage, salted pork belly instead of ham, Collier Cheddar instead of brown cheese, and datil pepper sauce instead of gochujang.
i had no idea anybody used brunost in korea. technically it isn't cheese, but whey and cream cooked down until caramelized -- hence the color and caramel flavor!

I never knew it was called 'fry sauce'. It's usually 'cocktail' or 'burger' sauce in the UK. I use it on my sandwiches for work.
The type of bread you use is hella important
The toast has to be light and not dense like the ones you find in regular grocery stores.
