There are some cooks out here who wouldn't mind a video showcasing the cooking equipment you are using. Your oven is similar to a brick oven my grandfather from Naples built in his back yard, and the brass & copper pans are absolutely beautiful. Also, I understand your redware and pottery is purpose-built for your own uses, and a focus on the variety of such you use would be an interesting video.

I think that good substitute for unripe grapes could be also unripe gooseberries. They have similiar acid, sharp taste.
Yes, they are perfect. In the Renaissance cookbooks, in particular Bartolomeo Scappi's, we frequently find gooseberries as substitute for unripe grapes.
