The best way I’ve found to defrost anything, especially meats, is to put in ziploc bag and fill a bowl in your sink, or your sink, with tap water. Put your meat in the water and Let sit. when water gets ice cold, if more defrosting is needed, drain and refill. Defrosts in no time flat!
I knew someone who was on the atkins diet, which is basically meat n fats etc like keto from what I can tell, but I’m no authority on diets. They made a meatloaf with pork rinds and breaded things with pork rinds back in the 90s. They lost a good bit of weight. Seems the men I knew who did that diet lost more weight. I tried it for 2 weeks and gained weight. Lol seriously.

Fertile eggs (chickens & ducks) are fine and I doubt they left it long enough to get sat on. 😁 look and see if you see a white dot like a bullseye. If yes, it’s fertile. All of mine are but I collect them daily. Use a duck egg when baking for a super richness.
You two are the sweetest. The cows' tongue needs to be boiled just as It is with whatever seasoning you prefer. When tender peal the skin off. Slice and make sandwiches, or I prefer to dice up and make tacos. It is very tender meat and delicious. I would say the consistency is like a processed meat. It's really smooth and soft. FYI

When I make meat loaf I do a 2 to 1 ratio of hamburger to sausage and didn't use ketsup in the later years. My husband had stomach issues and it was better for him with less tomato in dishes I made. Also add a little worsheshire sauce and onions.
Meatloaf is one of my favorite meals. I make mine with the dry Lipton Onion Soup Mix - so good. Up north we call them mashed potatoes. I have never heard of steamed potatoes - must be a southern thing. Thanks for the video.

Then, it made sense. We didn’t have them in louisiana, florida or Georgia where I’ve lived. I wonder if it’s an eastern NC dish.
Stewed potatoes are not smashed. They are cooked just like you were going to cook them to mash but you keep them whole add butter, salt and pepper. I'm from Kentucky and we eat these here too.. Yum....
✍ Hi Leslie...Since I'm from the 40s we always used crackers or oatmeal not only to bind the meat together but to stretch the amount of meat. I also like to fix my boiled potatoes for dinner or they are good when you boil and drain them then brown them in a skillet. They make really good fried potatoes. You could make meatballs with that extra amount of meat mixture you had from your personal meatloaf and freeze them for lunch or your dinner. Hope Bryant is feeling better today? Oh… when bryant said she avoided lines, my self checkouts have lines Ike crazy, thought it was a phone thing or something new . Okay- I thought I’d missed something. I can do self checkout, but they don’t take cash in most of ours here, strange, mostly at grocery stores. So I end up standing in line anyway. Im a cash person because I am on a budget and I feel it more when it goes through my hands and I look in my wallet and see what I have or sont have. If I don’t have it, I don’t spend it.

Everything looks delicious!! I shared my recipe below. If it’s not allowed, I apologize. Just delete. This is the one I use. It made a Meatloaf lover out of me, when I did not like it lol. Preheat oven at 350° Meatloaf 2 eggs. 2/3 cups of milk. 1 tsp. Salt. 1/4 tsp. Pepper. 3 slices of fresh bread, crumbled. 1 onion, chopped. 1/2 cup of shredded carrots. 1 cup of shredded cheese. 1 1/2 lbs. of ground beef. Glaze 1/4 cup of brown sugar. 1/4 cup of ketchup. 1 TBS. of prepared mustard. Beat eggs in large bowl with fork, add milk, salt, pepper, and crumbled bread. Mix well, let sit for a few minutes, then stir until bread sort of disintegrates. Add onion, carrots, cheese and beef. Mix well. Put into loaf Pan. Combine brown sugar, ketchup and mustard, spread on top of loaf. This makes a delicious glaze on top, once cooked. Bake at 350° for 1 1/2 hours. I drain the grease off when I take it out of the oven. Let stand 10 minutes.
Back when I was a kid my Grandma had a habit of setting something in front of us to try. Not only did she live through the depression but she & Grandpa had the town's meat locker when Daddy was a kid. She was likely to give us anything but you NEVER told her no! She wouldn't make us take a second bite if we didn't like it but we had to say if we liked it before she told us what it was. Bryant reminded me of one of those days. I said I liked the pickled flavor & one piece was good but even liking the flavor the texture of the other was gross. It was beef, pickled heart and tongue. The heart I finished but the tongue...NOT!!! 🤢

I was actually making meatloaf while watching and listening to your video! I like to add sweet Italian sausage with my hamburger. I made enough for two meatloaves Hubs likes meatloaf sandwiches so I’ll freeze one loaf for later. Now on to peeling the potatoes for mashed potatoes. 💕
I use to have chickens and a duck. Id use duck eggs in cakes , etc. I even deviled them. If you use 6 eggs in a pound cake, I use 3-4 duck eggs and 2-3 reg fresh eggs. Make very moist cakes and baked goods. You can use duck eggs in any recipe. The only difference is if you scramble them, the ones I had, tend to be a little gamey. Not much, but a little. It also could have just been my type of duck too. Super bright orange yolks!

Beef tongue is wonderful. It is a Jewish deli favorite. Cook it like a corned beef with garlic and onions and it is better than corned beef. Love it!
