If the second method doesn't work for you, try connecting a USB cable when you do it - not just charging, connect to a computer - both my S10's needed a connection before they would boot to this recovery menu
Thanks for this video. By the way, for Asia region you need to power off s10 and then connect phone to pc using usb cable and only after that use Volume up + Bixby + Power buttons. Without connected usb cable, boot mode will not appeared!
pretty sure he took it out, cuz the phone didn't give him the warning about SD Memory removal. I took it out when I did it just in case. Use the end of a paperclip if u don't have the right tool

hmm _- I tried to do my mums just before and I think she’d disabled it for a few minutes cause she forgot her password lol but it wouldn’t let me turn it off without the password which is such a pain but I suppose a great feature in case it’s stolen

Not if they've transferred to your storage card. But all data on the phone will be deleted and restored to factory settings, as if you just bought it.
