I love this segment, because in order to cook food of this quality, you have to be passionate, and the people interviewed are passionate about what they do.
In this part of the video he talks about a restaurant in Chicago known for their wines which is totally wrong because all restaurants are known for their food or cuisine 1st, then the bar sales 2nd, so if that be the situation, this place is doomed for failure, there has to be a mix of both in order to turn a profit but there are a lot of different factors that come into play here,and I have seen excellent places go down the tubes,and the 2 major factors that a business fails is 1st is very bad Management, and 2nd is under capitalized, most place's think that from the 1st day they are turning a profit, that's why they have to file bankruptcy within the 1st year and I have seen it again and again and a lot of upper Management have no prior experience in the industry, which is just plain stupid, considering how much money is at stake,of losing everything but I keep my comments to myself or the DEPT OF HEALTH, shuts them down. Major violations, that are not corrected, as the DEPT OF HEALTH, will not tolerate this type of behavior and it is posted on the front door and that's when you have new players enter the game but food service is very risky, it's a gamble 50/50.DAMN IF YOU DO,DAMN IF YOU DON'T, it's a CATCH 22.
