The only real debate was between Tabasco, Louisiana Hot Sauce, or Crystal. Now that I'm older, I've branched out to using Slap Ya Momma seasoning, and the extra hot Slap Ya Momma. Glad to see Tony getting the respect he deserves though, it's great for seasoning burgers.

Worked with Cajun cuisine for a while. You can toast flour in an oven on a sheet pan without a fan to speed up the roux process. Works well and only set the pan on fire once. 😂
I've always taken the time to make mine for my gumbo. Usually takes about 45 minutes to an hour and then I saw Alton Brown make his in the oven so I tried it and it worked perfectly.

Honestly, the carrot trick is best if you shred it in and sauté it with your onions and garlic. The searing of it makes it sweeter and that will transfer the best flavor into the sauce. It will cook away and dissolve that way too. I haven't made sauce in a long while. Being on the road for work is always tough like that. Wait...Lucas couldn't force his way in? I work for the PO. in Ville platte Karys roux is right across the street from when I would go in at 6am the parking lot is already perfuming with the smell of roux. I was always hungry for stew for breakfast. Also they were one of my favorite customers. They even nicer. I always use Karys!
