Oh dear! You simply can’t have a tagine without dried apricots! Lol My Mom used to make a tagine that was so incredible, and away from home it is definitely one of those comfort foods that take me back.

You were a busy girl indeed considering your wisdom teeth situation. Re the sheetpan prep I usually see the chickpeas dressed and popped in the oven on their own. But no matter as you said. I totally agree with you about the bread making. The starter is the key and habit plus routine gets the job done. Feel better 😊

Something I started recently and really enjoy is making mixed spiced beans from scratch in my Dutch oven from dry beans. My husband and I like them so much better and we know everything that goes in them. Something I've been doing for years is making my own hummus. I can't have commercial hummus cause I'm allergic to sesame (tahini) but it tastes better homemade.
I'm from the US and think that meatball subs are strange lol, my brother used to get one every time we ate at Subway as kids. Also! I saw vegan fish sauce at Whole Foods the other day and am considering trying it out, but I just thought I would mention it to you in case you wanted to try it in the thai green curry paste next time!
I have never thought of making curry paste so I will have to try this now. We do lots of food prep on Sunday's and also like basics so I have been looking through my grandma's cookbooks.
I use the impossible meat to make Korean Bulgogi. I get or make a Korean bbq sauce and add cooked carrots, wilted garlic spinach and quick pickled cucumber. Sooo good
If you baked/cooked the meatballs, then you can freeze them. You just shouldn’t freeze something after thawing it, because bacteria in it can start growing, but cooking kills bacteria, so it restarts the process :)

He irritates me as a Brit and says horrible things about people on low income here painting a stereotype not based in reality (I actually wrote to him about it and I got a letter of ‘apology’ plus a book with meat recipes despite telling him I’m vegan, he’s so tone deaf).

I made roasted red bell pepper hummus yesterday. I follow the rainbow plant life basic hummus recipe

If you have cooked the meatballs you should be able to freeze them again, you just can't refreeze raw.
Yep cooking gives you another chance to freeze.
