Brilliant salad bar! And great dressing ideas. I’ve been working on a good vegan Greek style yogurt on and off for maybe 12 years. I try it a few times then give up and months later I try again. I finally stumbled on a high protein, fiber rich, no straining version that I think could fool any dairy lover. Easy peasy. If you’re ever in Tulum Mexico I’ll show you the secret.
Love the look of these, especially the maple mustard one. I usually use silken tofu in place of yoghurt for these kind of things, but I have an instant pot so might just have to try your yoghurt recipe one of these days. I think some of these might make nice marinades for seitan/ tempeh/ tofu as well… either as a steak or in a sandwich as an egg mayo type filing but with seitan/ tofu pieces with whatever sauce.

There's too many extras we need to do to keep our lifestyle humming along 😊 Edit to add: I've never used mayonnaise. Yoghurt, especially Greek style, is so much healthier, so it's what I've always used for creamy yoghurt in salads (potato, coleslaw, in particular) since I was in charge of my own food when I became a vegetarian at age 12. Also, you both inspired me to experiment with a couple of packaged milks and for two weeks now have been successfully making Greek soy yoghurt from original Bonsoy (a Japanese soy milk freely available here in Australia). I thought I'd take a punt on Bonsoy because the Japanese are very particular about the purity of their food. So thanks for the inspiration, it's really changed my routine. Only point is, it's good, but homemade milk is really good. Not worth the time and trouble though for such a small difference ✌🏻
Your next experiment should be making soy free tofu. I love my soy tofu but I recently made fava bean tofu. It’s amazing and you get to seasoning in the process. It’s really easy. Simnett Nutrition has a great video for red lentil tofu.

Try using Allulose for a healthy sweetener alternative, I love it! You can get golden Allulose as well. It helps with weight loss. The science has shown great results. It helps curb your appetite and it’s healthier than even Stevia. I use it in baking as well. I used to use xylitol, but I love the Allulose!!!

Seriously, dump the milk in the IP, add 1/4 cup whey from the last batch and press yogurt setting, 12 hours. It's perfect every time. I still do a two day strain for the Greek version but the recipe is perfect every time.

I can’t eat sweeteners because I’m pre diabetic with really high triglycerides. I’ve been using stevia for sweetness, even though Dr. Greger hates it too, would you recommend the monk fruit instead? I love the homemade yogurt so much, but I wondered why it took you 2 days to drain, but now I know, your yogurt is like cream cheese, yum! Can’t wait to try the ranch dressing especially, I miss it!
Yes, when I did the first video, I mentioned how i drew a line at the point where the whey was draining every 12 hours and there was still a lot that drained between days 1 and 2. You could try other substitutes. I just wanted zero calories.
Back in the 1970's my grandma decorated with those elves but they were just decorations per say not all the crazy stuff it became. There were also elves in green outfits she had too, where the hell did those go?
The store bought is 2/3 of a cup. It is about the same with mine but mine is exactly 1/6th of the recipe because the recipe makes 6 cups. But if you use store bought, use 2/3 cup, which is one serving of like Kite Hill for example.
The red elf shops sends the outfits once a year and asks for nothing in return, so I add it to the holiday videos. You can forward past it if you want. I would much rather people buy from this small business on Etsy than a big company so I am trying to do my part to help out with that.

You can but they are loaded with calories, but for a more whole food version absolutely.

It is one sixth of the recipe. Its not always the same number of grams or oz because it depends on how much whey strains out each time.
When you say you use two milks for the yogurt, do you mean two containers of the Eden soy or now you use two different kinds of milk?

Try kite hill Greek style yogurt. It has 17 grams of protein per serving.
