    In the old days they may not have had clear glass, would a wood container or less see-through change things.

    Awesome! All of it! The off scent will probably age out? Some ferments have a ‘footy’ smell to them that goes away with ageing. The ‘ancient’ method you used probably stressed the heck out of the yeasties, causing them to fart some pretty noxious stuff. now that you’ve racked it it might go away through the airlock. The only thing I’d worry about is the head space.

    I think if you are gonna leave it in heat in the sun, you should be using Kveik yeast at least then the heat will work in your favor lol
