    Al, I am just making a friendly suggestion. That apple wood split and cut into chunks could be a quite lucrative income stream. Yes it will heat, but if you sold it in 10# bags cut into chunks for smoking, it would likely buy you 3-4 chords of hardwood. I’d prefer y’all prosper as opposed to subsisting.     You need a barn for all you outdoor farming equipment, and hay barn. 2 room shed for such.

    Way to go ! with the goats cheese Gina, don't be to hard on yourself, that crumbly cheese is ideal for stuffing cherry tomatoes, place a few leaves of fresh basil in a canning jar, place tomatoes on a baking sheet and cook in hot oven for around 5 - 7 mins take tops off and scoop out the seeds, fill tomato cases with your cheese, then place your stuffed tomatoes in jar, fill with your choice of oil and seal, beautiful on salads and good on pizzas , plus place them on your steaks for the last few minutes of grilling, the longer you leave them in the jar the better they are, sending a little bit of the Mediterrenean to New Hampshire

    We purchased a chipper/shredder that was a former rental unit. We had it reconditioned and the cost of the unit plus the recon job was less than 4 day rentals of the same unit. You can also keep a look out for a display unit going on sale. Admittedly, it's not a big commercial unit, just a Yardmax that can handle 3 inch branches; but it might be useful on your small farm.

    I love Hope's bond with Al. She always walk with him first to the feeder rain or shine.
    She expects him to dump the grain all around for her to taste it like she was at a buffet!

    It is time to pick up the baby goats and rub them on the sweeper, to teach them that they can use it to rub themselves. You can`t teach an old goat a new trick but the babies can!

    All the land you covered for the next big project I say from Jamaica cottage a desert shack for Olivias desert business and Jeana wanted a cottage for her for her cooking channel and spa with steam shower and hot tub to enjoy during the winter. Plus another barn with lots of stables for large pig production and sell the meat or with turkey production or cattle and beef production. Can’t wait to see the next build

    Great progress folks. Looking at all the apple wood, I agree with the guy who suggested it could be cut up and bundled into wood for smokers. If you can tap into the right market, you might be amazed how much people will pay for that wood. Also, how cool would it be to set aside some smaller cuts for the ladies to use for select projects? It's workable, and resembles cherry in that regard.

    Based on making cheese nearly 50 years ago,,, the next batch you might try just reducing your hang time by 30 - 40 minutes and work outward from there. Goat cheese with chives is a favorite around here.

    Good job on the cheese. I buy it from a local business and I prefer it crumbly. It's great on salads, especially arugula with cranberries or blueberries also a watermelon salad. . Also, as a kid my dad's farmer friend allowed us to pick blackeyed and cream peas on his land that was on a government program that paid him to plant but not to sell the peas. Helped enrich soil and cut down on oversupply. Mom wouldn't stop picking until we had three bushel basked packed with peas. Then. Hours of shelling which resulted in sore thumbs, but a great pot of peas for supper and many frozen for later. One night I found a small worm in my serving. Pushed it to the side, kept eating and said nothing. Wasn't going to have everyone stop and discard peas my thumbs suffered through in the shelling of them. Happy shelling and eating. Joy Giles

    Gina, we used to hang our goat cheese about 3 to 4 hours, depending on how creamy we wanted it. If you hang it too long it makes great goat cheese spread. Separate it into 3 or 4 portions and add some different herbs to each one for a different spread. Roll into logs w/waxed paper, then plastic wrap and I put into a zip bag. We use it on English muffins, beagles, toast, all sorts of things. Great on baked potatoes also. Invest in a good goat cheese making book. I have several and you can make all sorts of cheeses. You are doing a great job w/those goats and you have great milk producers. Keep it up. Love watching you do different recipes. You have a beautiful homestead.

    Finally, zucchini from the greenhouse. i know that felt good. Congratulations!
    i saw a tip bout your cucumber beetles if you catch a bunch you can put em and cold water in blender & mix.
    Put liquid in spray bottle and spray plants. Beetles release a death pheromone that tells other beetles to avoid area.

    I use goat cheese all of the time, and it is always crumbully, but looks like cream cheese in the packaging. I don’t know if you’ve tried this, but when you’ve grilled a stake, put some goat cheese on top of the steak a couple minutes at the end, and after it’s rested for 5 minutes drizzle a balsamic reduction over the cheese on the steak. It’s amazing! Thanks for showing us a use for the goats milk.

    Back in the old days -- during WWII everyone raised chickens. When we clipped wings we only clipped one side so the bird would be out of balance when it tried to fly.

    I have always used an old fishing net (landing net) with about a 4 foot pole to catch my birds......Makes life so much easier!!

    SAVE THE WHEY!! Use it when cooking rice and boiling pasta instead of water. Makes cheap pasta taste home made. Been making my own cheese for years.

    BTW: After watching you inside the Green House and seeing those Beautiful Zucchini Flowers, I was wondering if you ever had FRIED ZUCCHINI FLOWERS???? It's an Italian Delicacy and my Grandma would make them when we were kids. THEY ARE DELICIOUS. And don't worry, to keep getting great zucchini, you cut only the Male Flowers. Do it in the morning when they are open so you don't have any bugs in them. TRUST ME THEY ARE AMAZING AND LIKE NOTHING YOU HAVE EVER HAD BEFORE. Look up online or here on RUclips for some EASY Recipes. There's really not to much ingredients. I like mine with Mozzarella and Prosciutto but you can stuff them with just about anything. My Grandfather loved them stuffed with Anchovies. Try them and let me know what you think. I'm sure they'll become part of your diet. Only time to make them is in the beginning of Summer.

    It needs to be a good sized two/three story 🐮 barn/tool storage floor /hayloft! So you finally get all your tools put away when you're done with them, and can actually get Gina"s car in a garage! And than there's the rain water catchment system! Unless it's illegal in NH? and the list keeps growing as Your homestead keeps developing!     That's it I'm moving to New Hampshire, 71 with 94% humidity sounds awesome, just unloaded 500lbs of hay and just as much grain in FL its over 100 here and the same humidity. I think the new project is going to be a sheep area or maybe a cow.

    Those peas look DELICIOUS! Food freshly picked is so much more flavorful than store-bought, even the organic/heirloom produce. Your gardens and greenhouse are looking fabulous!

    If the farm ever needs multi purpose trees I highly recommend the hybrid poplars sold by a nursery in Frysville, PA. I planted some in my yard in Colorado in the 1980's.
    The darn things were 12' tall in 3.5 years. FIREWOOD SIZE 4" diameter in less than 5yrs. Fodder for livestock. VERY easy to root cuttings.

    The homestead has changed so much in just a few years !!!!
    I have to admit I don't miss those muggy days. I visited my sister a few years back in Maine and it rained the whole week and the "humdity" was around 90%. It's been in the mid 90's here this week but it's a dry climate. Looking forward to the next project.

    Good job on the cheese! You can add a small bit of cream (or goat milk) to make it more like cream cheese.

    If you wrap the drained cheese that you salted, in cheesecloth, then dip in wax and store in a cool place for a few weeks, turning daily. Tou will have a dryer cheese that can be sliced and used on sandwiches, grated on pizza, topping for spaghetti dinner, Mac and cheese etc. will have better flavor than store bought!!!

    22:00 if some of the peas grow to big and become less tasy, take a needle and a string and just make a necklace of them. hang them dry and warm, and plant them next year

    Pluto looks awesome. We shave our dog down for summer too. Not sure what your next project is but it will be fabulous whatever it is! That is the type of torrential rain we get here in the high mountains of NC. We've gotten tons of sugar peas, radishes and herbs so far. There are tomatoes coming and we should be able to pick at least 3 cukes today. Blessings to all.

    💞Every new endeavor takes a bit of time to master. Your next cheese making will be better! I can't wait to see what is next. I think you should have a driveway that goes up the left side to the outdoor kitchen to save from going around the right and on the road to get just a few feet up to the greenhouse creating a circle drive.

    I'm from Newfoundland, your living the way I was brought up. We've had snow in June dometimes and we couldn't go swimming in the brooks, ponds; or the sea until June 30th until the chill was out of the water.haha

    With the trees gone it could be a growing area for something or even just a close spot to keep the bees near the barn

    Love that you're giving the wood multiple purposes. Then the biochar from smoking can be added back into the compost to help grow more food

    Sometimes a tree is just nice to have regardless of what it produces. I am sure the apple trees have beautiful blossoms in spring. You have enough land. Why not plant new apple trees somewhere else; you also have lots of places to push your snow.

    I haven’t cheated & looked forward because I like to watch as though it’s all fresh. That said, I think the new project has something to do with the goats. Maybe they’re building a new structure with multiple birthing stalls or a multi goat milking parlour. Those things seem too far away to be building now… hm, cow or Sheep shed for the grass eating/lamb producing sheep or milk/beef producing cow Al talks about wanting to add to the homestead

    I think you need to turn up the oiler on you're saw and maybe adjust the low end on the carb. Just a suggestion

    Don't forget, you need the lemon juice or white vinegar before draining...and reserve some whey in case it seems dry, you can add it back in...and salt, to perfect your cheese...Good Show! Next time, reserve some whey! I do, it works! Cheers!

    When I was growing up on the farm the truck that picked up our milk had a tank of whey to deliver to any farmer that wanted it. We always made a mash for the pigs using this and the dry food. Didn't have pellet food back then. When it was delivered the process of filling the barrel made a foam on top which i would dip my fingers in and lick off. Was not very sanitary but we didn't worry about such things and we all lived and was pretty healthy. :)

    Your such great parents Gina is learning so many great skills, most city kids wouldn't know what to do with a pea pod:-). I'm thinking maybe getting an area ready for your future orchard. We get a lot of snow too & you always have be thinking about where your going to put it. I wonder if this year is going to be heavier, because of this grand solar min. year.     Listening to the sound of your chainsaw, sounds like the chain is too tight! I was told that the chain should sage on the bottom side of the bar. This is why the saw is binding while your cutting.

    Speaking of trees... do you ever get out in the woods and get your Maple sap for sugar and syrup in the winter? Would the pigs eat windfall acorns from the woods around your place? I understand it gives the meat an nutty flavor but that might be an old wives tale. I hope you're doing cider apples and peaches! Hhhmm. Raintree Nursery has good apples. Gina's going to get the cheese bug and join us curd nerds. It's so good freshly made. And like others mentioned, the texture changes as it sits in the fridge awhile.
