- Baked kibbeh and cabbage salad
Recipe:
For the kibbeh :
1 pound Lean ground beef
1 ½ cups fine #2 bulgur wheat
2 cups room temperature water,
1 large onion
1 1/2 tablespoons allspice
1 tablespoon Aleppo pepper
1 tablespoon paprika
1 teaspoon black pepper
Salt to your taste.
For the filling:
1 pound ground beef
1 large onion diced
1 tablespoon allSpice
1/2 tablespoon Aleppo pepper
1/2 tablespoon paprika
1 teaspoon black pepper
Salt to your taste
1/2 cup pine nuts
You will also need olive oil (butter optional) for greasing the pan & drizzling on top of the kibbeh.
Cabbage salad recipe:
4 cups Shredded cabbage
2-4 chopped cucumbers
3-4 crushed garlic cloves
4 tablespoons olive oil
1-2 fresh squeezed lemon juice
1 tablespoon dry mint
1/2 tablespoons Aleppo pepper
Salt to your taste
(Adjust seasoning to your liking)
Directions:
1- To prepare the base meat mixture, add the bulgur wheat in a bowl along with the water,let it soak for 10 minutes to absorb all the water.
2-add the onions to the food processor and blend, then pour it on the soaked bulgur along with the spices and the lean ground beef , mix with hand or electric mixer until fully incorporated, set aside.
3-Heat the olive oil. Add the ground beef cook for few minutes until the beef is browned then add the diced onions , spices, pine nuts and cook about 8-10 minutes.
4-grease round baking dish with olive oil, Spread kibbeh mixture on the bottom of the prepared baking dish.
5-Spoon all the filling on top of the base layer. Finally, Wet your hands with water to easily spread the mixture, grab handfuls of the remaining kibbeh mixture and press down on top of the filling and fill in the gaps so it's smooth, drizzle olive oil to coat the top layer.
6-Slice kibbeh diagonally to form diamonds shape, bake at 400 f. For about 1 hour.
7- best served with cabbage salad and some pickles ♥️
