I am a Geotechnical engineering faculty.
At 1:20,for gravel, i think u should represent it as larger void space instead of volume of voids. as volume of voids are more in clay. i think it is appropriate to use term of large void space instead of large volume of voids.

The velocity in the Darcy Law is Discharge Velocity, which is in fact not real and it's superficial. So my point is that How Darcy measured the superficial velocity instead of actual velocity or seepage velocity.

I think permeability is in directly proportional to hydraulic gradient..
So v = k/I
And k= visc * ( 1- e)/ D * D * DENS * C * e * e * e
