I love mung bean vermicelli. Such a great bite. Love your content. One thing I am doing different when I use onions in a noodle dish, I cut them from the root to the top and not from side to side. It will hold its shape better and will give you a better bite with the noodles.

Yes, black vinegar, but you can use any acid, even lemon juice, just to brighten the dish a tiny bit. 🙂
