Ingredients:
250g Tamarind (seedless)
1 cup Jaggery (grated)
2 tablespoons Red Chili Powder
1 tablespoon Turmeric Powder
2 tablespoons Mustard Seeds
1 tablespoon Fenugreek Seeds
1 teaspoon Asafoetida (Hing)
Salt to taste
1 cup Oil (preferably sesame oil)
5-6 dried Red Chilies
Curry Leaves (optional)
Instructions:
Prepping the Tamarind: Begin by soaking the tamarind in warm water for about 15-20 minutes. Once softened, mash it well and strain out any impurities or fibers. Set aside the smooth tamarind paste.
Preparing the Spice Mix: In a dry pan, roast mustard seeds and fenugreek seeds until they turn aromatic. Grind them into a fine powder using a mortar and pestle or a spice grinder.
Cooking the Pickle Base: Heat oil in a pan over medium heat. Add dried red chilies and curry leaves (if using) and sauté until fragrant. Then, add the tamarind paste, jaggery, red chili powder, turmeric powder, ground mustard-fenugreek powder, and salt. Stir well to combine.
Simmering the Pickle: Let the mixture simmer on low heat, stirring occasionally to prevent sticking. Cook until the mixture thickens to a pickle-like consistency. This might take around 15-20 minutes.
Tempering: In a separate small pan, heat some oil and add a pinch of asafoetida (hing). Pour this tempering over the cooked pickle mixture and stir well.
Cooling and Storing: Allow the pickle to cool down completely before transferring it to clean, sterilized jars. Make sure the jars are airtight. Store in a cool, dry place. The pickle will mature over time, developing richer flavors.
Serving: Enjoy your homemade tamarind pickle with your favorite dishes like rice, chapati, paratha, or as a side accompaniment to your meals.
Bonus Tip: For added crunch and flavor, you can also toss in some roasted peanuts or sesame seeds into the pickle mixture before storing.
