  • Hyderabadi mutton dum biryani.
    Ingredients:
    For marination
    ● ½ kg mutton (cut into medium-sized pieces)
    ● ½ cup curd
    ● 1 tablespoons ginger-garlic paste
    ● 1½ tablespoons lemon juice
    ● 3 green chillies (paste)
    ● 1/2 cup fried onions (store-bought or homemade)
    ● 1/3 cup chopped coriander leaves
    ● 1/3 cup chopped mint leaves
    ● 1 tablespoon kashmiri chilli powder
    ● 1/2 teaspoon turmeric powder
    ● 1 teaspoons garam masala powder
    ● Salt to taste
    ● 1/4 cup brista oil
    For rice:
    ● 2 ½ cups Basmati rice - soak - 60 minutes
    ● water
    ● salt
    ● 1 teaspoon caraway seeds (shah jeera)
    ● 2-3 green cardamoms
    ● 2-3 cloves
    ● 1-2 bay leaves
    ● 1 cinnamon stick
    ● 1 tablespoon ghee
    ● coriander
    ● mint
    ● lemon - ¼
    For assembling:
    ● 1/4 tsp saffron- ½ cup boiling milk
    ● 1/4 cup fried onions
    ● 1 tablespoons ghee
    Dum biryani is a slow cooked, layered rice dish, and normal biryani is a kacchi biryani or pakki biryani. In normal biryani, the meat and rice are cooked separately before being combined. In terms of taste, dum biryani is often considered more flavorful and aromatic due to the slow cooking process.
    The dum-cooked rice with unique flavours of whole spices gives Biryani a more royal touch. It combines with Indian curry Salan to enhance the flavour and aroma. A food poll confirmed that biryani is among the most famous dishes not only in the Indian subcontinent but also in its diaspora.
