Well, I don't know the real words in english but I will try to explain what I recently learnt: when you use that kind of stick, you don't remove metal. In fact, you are straightening the edge of the blade, which has somehow become distorted by use. You have to do it regularly and it is quick and easy to do. Then, about once a year, you have to sharpen it with a stone. Often, people would bring their knives to a professional for that.
