A psychologist barber? Is it just an excuse to raise the price compared to the competition? There is nothing special in what I saw, just some scented products. A little "aromatherapy" does not really make something psychological and you do not have to be a psychologist to do it. Instead I noticed small abrasions and bleeding, and that is not an indication of good service.

Just that she also happened to be a psychologist, showing that she likes to make people feel good with themselves, like with the barbering. And for the bleeding, that would mean all the barbers I visit give a bad service...
I have a blood spot or two 75% of the time. Out of these, about 2/3 is not related to the barber/blade. It just happens. Watch my videos in the Turkish or Indian barbers and you'll very often see a spot or two even though they've been doing this for decades.

It might just be how your beard grows, but it doesn’t seem like any barber is ever able to properly give you an even looking goatee.

I don't think it is in Colombia. In restaurants, they are very transparent and they tell you clearly when it is expected as well as the amount (10%).
