INDIAN BASE SAUCE, you can cook almost all Indian masala dishes with only this base sauce/gravy. This is the Indian hotel style, all-purpose base sauce. Onion and tomato masala has all the basic flavours you need in your curry. This hotel-style Indian base sauce will spice up any of your favourite vegetables/meats/fish dish to a restaurant/hotel style dish in your own kitchen.
You can prepare in advance without much hassle and use a few spoons for a quick dinner with a splash of water. Surprise your friends/family with a delicious meal. They will LOVE the new flavours and I guarantee you THAT.
Recipe
Red Onion 5 (Finley chopped)
Vegetable oil 250ml
Cinnamon sticks 3 inches
Cloves 10
Black Cardamom 3
Black Peppercorns 8
Green Cardamom 8-10
Bay Leaves 2
Boiled Cashew Nuts 100g (ground into a fine paste)
Tomatoes 6 (Finely chopped)
Ginger and Garlic Paste 2 tbsp (50% ginger and 50% garlic)
Turmeric 1 tbsp
Kashmiri Chilli Powder (Mild) 1 tbsp
Coriander Powder 2 tbsp
Freshly chopped coriander leaves 1 tbsp
Green chillies (deseeded) 2-3
Salt to taste.
Water as required (to avoid sticking)
So I made this recipe yesterday and my wife and I enjoyed 2 lovely curries from it. Plenty base left for the freezer! Thank you very much for giving us this, so much more spicing than I'd used previously.

The oil is so important as I'm recently realising, most recipes use barely enough for fear of putting people off, but they don't realise how important it is to fry the ingredients especially spices (bhuna) and any remaining can always be removed (and saved) as you show.

Won’t you grind this to use as base gravy?
Hi how many meal portions can you make out of this receipe. And how do you make larger quantities ie to batch cook for about 16 portions. Thanks
If you tripled the ingredients and cooked that sauce that will easily feed upto 20 portions. Usually 2-3 table spoons are enough for a portion of chicken/lamb/veg curry.
Can you freeze this base gravy please
Yes Lynn you can put it in freezer bags and freeze upto a month away from ice cream etc

Are your spice measurements using proper measuring spoon quantities, or are you just putting in a heaping tablespoon from the kitchen drawer?
Yes I noticed in video it looks a lot more than ingredients list used
