    Fast, efficient red wine cap management of grape fermentation that replaces and/or compliments wine punch-down or wine pump-over to improve extraction of color from grape skins, wine phenolics, flavor, aroma and tannins in an efficient vertical air mixing process. The award winning wine cap management process is used today by well known and respected wineries around the world. The compressed air pulses are released below the wine grape cap. The huge bubbles are gentle on the fruit and break the grape cap into individual berries to improve extraction. Single pulse point systems can work in closed top wine fermenters, open-top tanks and bins.
