They killed the Lannister rearguard. Most of the army should've been up at the front and made it to King's Landing with the gold. A small portion of the army (what appear to be mostly household troops due to their special boy Lannister house armor, rather than generic Westerlands armor like we saw on Ed Sheeran and the boys) was left to carry the supply train as the rearguard. This was probably a 25k vs 1.5k battle, which the Lannisters still could've one if they had quality Bolton pikes and pavisiers rather than shitty kite shields and shortspears.
Why it wouldn't? Idk about tv series, but, according the book, it would indeed. Rob would remain king of the north (Red wedding was a complex plot of Tyvin, and there is mentioned, that Fray would never do it alone). Tirels would continue fighting or stay nutral (because there is no marriage-based alliance), the same is true for Dorn. Diplomatic capabilities of Stannis are well-known (0). It would be endless civil war under his rule.

Aegon I Targaryen was the first of the Targaryen dynasty, who lead a campaign of conquest much like Alexander the Great, or a better example here, King Soloman, that essentially founded Westeros. Think about it, Aegon I is essentially the nation's founding father and there's barely any monuments dedicated to him. There's no claimed burial ground. There's no body. Nobody has witnessed him die in battle or even of old age for that matter. There's no historical documents regarding the man's death. The story goes that after his conquest of Westeros, he simply sailed back to Essos in persuit of other adventures, and then was presumed dead and lost at sea. I believe he sailed north instead were he unfortunately met his end by becoming a white. A man of his spirit would naturally become their leader, and it's fitting that he's now leading the white walkers to do what he knows best - conquering Westeros. So going back to my allegories, the Targaryen's are Jews, the Night King is Aegon I undead reincarnate, so he's the first royal Jew who lead a campaign of conquest to create greater Isreal. He's the Jews reincarnated false messiah. The problem is the Jews already killed their messiah. So this would make the Night King an allegory of the anti-Christ. Night King = false Jewish messiah/anti-Christ.
