Great video, the scenery on the Coast Starlight route which is shared with the Pacific Surfliners between San Luis Opisbo & Los Angeles is my most favorite Amtrak route, I rode on the Coast Starlight 3 Times. The Pacific Surfliner/Coast Starlight route would make a great model railroad setup.
Your footage is top shelf! When did that Union Pacific Passenger train come through SLO and how did you know it was coming! I would have killed to chase that thing with my drone. I can only seem to catch Amtrak's passing through.

keshamarie1 They don't necessarily have passenger trains. The one in this video is an excursion or employee special of some kind.
