    Interesting.
    I just did a point yesterday on my Weber kettle.
    7 hour cook and 2 hour rest. Turned out fantastic. Only drawback is adding charcoal and wood chunks from time to time where the pellet would be less work.

    This was interesting. I'd never heard of Lion's Mane Mushroom before. Amazon sells kits to grow them and they're not expensive at all. Pretty cool.

    I still like having the fat cap up. I enjoy the flavor and extra moisture. Looks good.

      @@rodneytrotter8441 I don't know about smokers specifically, but some of the stuff aluminum foil gives off in high heat has been linked to Alzheimer's and dementia.

    How long did you cook at 250?

      Probably about 2 hours? However, don’t get hung up on time. Cook to temperature, it varies from meat to meat and day to day conditions.
