So... Your supposed to cook salmon with the skin facing up. That way the oils soak into the meat. You also know when the fillet is done when you can easily peel off the skin.

That peach "trick" is actually called scalding and is used regularly in cooking. This works with basically any fruit/vegetable.

The shrimp "vien" is the intestinal tract. Ever had a "grainy" shrimp like it had sand on it, thats poop. You should wash them thoroughly after peeling.
