How do I make it so the top doesn’t crack?
The reason why it cracks its because you probably incorporated too much air into the batter while mixing it. I recommend using a hand whisk and slowly mix a few times, this will help to kill some of the air bubbles. You can also give the pan a few taps from the bottom to realize the air bubbles and with a toothpick you can pop them. When mixing the batter put the speed on the lowest so that it doesn’t incorporate too much air or if you are doing a small batch you can do it by hand with a spatula or a hand whisk to mix the ingredients. Another could be the oven temperature. Make sure it’s really hot (preheated) or else during the baking process since the oven is not hot enough it may cause cracks as well.
