I tried many different recipes to make sorbetto and, after testing all of them, I finally found what, in my opinion, is the best and easier one.
Sorbetto al limone is something that I really love and I think that, especially when outside it's very hot, there's nothing better to refresh yourself.
In the ancient Roman times people didn't have any freezers, so imagine how difficult it was for them to prepare this delicacy. That's the reason why, anciently, only very wealthy people could afford such a dessert.

Yea that's not 3 tbsp of olive oil......... if you're going to name measurements, actually measure them that way.
If I wrote 3 tbsp, then it was 3 tbsp, I am pretty sure. We use a different measurement system here, so maybe sometimes the conversion is not 100% accurate, but I can guarantee that if you follow the recipe the result will be good.

Hi! Thank you for your comment. Honestly I added the egg white because it is included in the traditional recipe. I think it helps keeping the mixture foamy and airy, so that the final result has a better and smoother texture.

Can I use whipping cream instead of egg white?
You can try, but I am afraid that the cream could react differently during the freezing process. Plus, it would become more like lemon gelato than sorbet. In case you try let me know how it turns out! :)

No, you can't, I am sorry. Milk can't be whipped and it will not work.

Again: in Italian we call all kind of iced cream gelato. What the world calls gelato is "gelato artigianale" here.

Delicious, and explained so clearly and thoroughly, that we should all manage to do that! I was at a restaurant called “Dorothea’s” in Paris and they served sorbet like that, also orange sorbet, also served inside a scoured out fruit. I presume the recipe is the same for an orange? Every family has it’s own recite. Taught from grandmother. This one is good but to me not perfect. First carrot must be chopped more finely. When the sauce is done you must not see that big chunk of carrots. White or red wine it’s the same. It’s up to you. White wine is more delicate whilst red wine brings its own flavours depending on which wine are you using. First brown the meat and then add the vegetables. Don’t add water but a good beef stock. Finally a cup of milk at the end to sweeten the acid of tomatoes. Don’t forget parmigiano reggiano over the pasta.
Please remember to wash lemons with either vinegar or fruit wash. You don’t want all those chemicals or wax.
We don't have any of this in Italy and the lemons were very good quality, but thanks for the advice!
If its "organic", you don't have to wash it. Here in Austria, we can buy lemons from the Amalfi coast and they are organic, so no chemical treatments. Many people don't know that Olive oil is not a high temp cooking oil. Its profile changes with high temperature as it has a lower smoke point. But im not Italian so what would i know?. Its more suited for table use for things such as dressings etc really. I might use it in a pan for really quick flash cooking but i always use it with butter when i do. Only for things that are in and out of the pan within 1-2 mins like calamari. The way this cook uses it is correct he used it quickly to extract some flavors the added straight way thr tomatoes. This is another way olive oil can be used.
Thank you for your teachings, but in Italy we started using olive oil for cooking almost 3000 years ago, and it has been working very well ever since.
Maybe American sweetened condensed milk is different, but this came out way too sweet. Tasted nothing like the gelato I've had in Italy.
Now I know why lemon sorbeto is white and not yellow. Very nicely presented, and just what I was looking for. Thank you.
