Hey y’all! Welcome to Dandy’s Travel Kitchen! I’m Amanda, but my nephews call me Dandy.
I’m a Southern girl who travels the world. I’ve been cooking since I was a little girl. I grew up watching my Mom and Memaw cook for those they love while making it look easy. Quickly I learned, preparing food was part of my family culture. They never told me “No” when I asked to help, and as a result, I grew up with a passion and fascination for good food.
When I began traveling full time, I made a point to learn how to make a dish in every country I visited. I’m a Texas based home cook and I’m so excited you’re here! From Texas to Thailand, I’m going to teach you how to make the exotic dishes of my travels, put my creative spin on some traditional flavors, and maybe even share some of my family’s best down home country cookin.

Made this today, I was low on sour cream so used Greek yogurt and only had a half cup of buttermilk so added a half cup milk, also I used pickled jalapeños that we pickled last year. Wow! This is an amazing recipe! Thanks so much for sharing!
Chuy’s doesn’t use sour cream for this creamy jalapeño sauce. There are so many fake recipes for this sauce online claiming sour cream is an ingredient. I believe this is a scam and conspiracy. Anyone putting out a video like this saying this sauce has sour cream has no credibility whatsoever.

He cooked completely different from my mother in law which was from the states. I cooked couple things that are a lot like his recipes.

Yes! Chuy's frozen margaritas and jalapeno ranch dressing. LOVE IT! I have made it alot too! I have used pickled jalapenos also, but i want to try your recipe with a fresh jalapeno too! Wanna tell you about my new best friend in the kitchen if you don't have one by one they are super cheap get yourself a canning funnel fit that jar when you make stuff like that you can just take it and throw it right up into the funnel and it's easier. Interesting! I normally have a Long-Grain Jasmine Rice, my family used to get the Three Sisters Brand. Jasmine Long Grain Rice for us is the defacto rice we eat daily at home. Also, again, Nishiki or Calrose rice. Noodles come as we go, but we get dried Ramen or Rice Noodles too, we also have the mung bean noodles (two different brands, one of them being the brand you bought)! For both, if we want refrigerated or fresh, we go on the day to grab them from trays(so noodles created on the same day.) My family also have certain essentials that we need: Sriracha, Light Soy Sauce, Fish Sauce, we use almost on a daily (my brother can "taste/smell" it, like Jimmy, doesn't like it) there is almost no way to get away from Soy Sauce and Fish Sauce while Sriracha is used as a condiment. Chili oil tends to be as a dipping sauce or to mix in sauces like soups if you want to make it slightly spicy. Other sauces that tends to be used for specific dishes or flavor: Oyster sauce (rounded salt-sweet flavor Umami for everything from stir-fried vegetables to meats), Similarly, Hoisin Sauce, can be used in similar roles to Oyster Sauce We tend to use Mirin and Rice Vinegar for meats or a little bit on soups to change the taste. Things like curry and coconut sauce, not as much. When we use curry, it tends to be Yellow Curry or specifically made using ingredients. I like Thai curry, I love Japanese Curry, I like Indian Curry too, as long as it is wet curry. Honestly, the amount you know about common Asian ingredients and condiments is a lot better than certain celebrity chefs (in which I won't name, lol)

@@DandysTravelKitchen Hahah, I've been looking on youtube, but Jamie Oliver likes to change the dishes to his own "UK Flair" kind of way. I don't often see him use actual Asian ingredients and more like an interpretation of the ingredients he thinks are in them. Chili Jam in place of Sambal/Chili Paste for one example. Or when he does end up using Asian ingredients, he ends up mixing something strange into it or improperly cooking it (breaking Tofu into random bits and pieces between large and small sizes as one example.... or cooking the vegetable that cooks in a couple seconds into the pan first.) I'm not a cooking purist, but it's O.o........ Gordon Ramsay and a few others I've been watching are good though even if they do substitute ingredients. Substitution is okay, because at the end of the day, as long as the food is good, I'll eat it.

There is more brown sugar in Asian food than you would expect. It’s actually good! I think 1/4 cup is too much. Start with a couple tablespoons.

Added a few twists: Miracle Noodles (shirataki noodles); frozen ginger cube (Wal-Mart...every easy), coconut aminos instead of soy sauce, Shichimi Togarashi (Japanese red pepper), roasted pepper pieces -- in my oven, subbed brown sugar version of monk fruit sweetener, and I diced up some leftover Spam. Miracle Noodles don't have quite the same texture as ramen and a bit harder to prep as they must be washed, washed, washed, dried fully and THEN cooked...but just a few carbs. Still, that SAUCE is so incredible. It could make cardboard a gourmet delight! This is now a household staple! Thanks, Amanda!

It’s not a non-stick wok. It’s carbon steel so a metal cooking tool won’t hurt it.
