If you're playing with the games actual decks, could you just apply the dice rolls for them? Or is this just for the special cards?
This is just for the special cards. You need the extra information on them for this to work.

I've been dabbling in some customs and making a solo/co-op mode as well. How did you make your customs and what fonts did you use? Yours look fantastic.
The custom frame is based on the aspectless frame with a bunch of copy-pasting for the cards that didn't already have an existing aspectless frame. And then it was just spending hours in Photoshop getting everything to match as close to real cards as possible. @24:57 when the Droidika attacks Vader should it not have killed him base of 3, 1 experience token, 4 damage with Grit total (3+1+4=8)
Absolutely. I only counted the Grit as 1 for some reason. :/

This is fantastic! I really wanted to get into SWU but was looking for a solo mode to play. Was disappointed to see nothing official thus far, and, as of FFGs Gencon Inflight Report this morning, nothing solo seems planned for the future...so I'm really looking forward to working with this! Any plans for future content/expansions from you?

Very interesting i will definitelly try it, did you tried to play against it with some tier 1 build?
There are definitely decks that do better against the AI decks -- and something like Blue Vader or Emperor is probably going to have a much easier time. But the hope is that the easy and hard modes will make the system flexible enough to offer balanced challenges to most decks.
